  1. Pork Fried Rice.

Any leftover meat (chicken, pork, beef), make according to family size

    2 lg. onions, sliced

    Soy sauce

    Garlic, celery & onion powder

    Minute Rice

    2 eggs.

Cut meat in small 1/2" square pieces. Fry onions in very little oil until limp; stir in soy sauce. Mix cut meat; stir together, continue mixing. Add a little garlic powder, celery and onion powder.

Prepare Minute Rice according to directions. Add to above ingredients. Stir until well mixed. Taste and add any above soy sauce, garlic, onion, etc.

Now make a centre hole; put a little butter to grease pan. Beat 2 eggs slightly; add a little bit of garlic powder. Cook like scrambled eggs, very loose. Mix together with all above.

    This is very tasty.

  2. How about a build-it-yourself taco bar?

I did this for a graduation party for 50, and it was a big hit.

Make everything up ahead of time, put the meat in a crockpot, and place the lettuce, tomatoes, onions, cheese, olives, salsa and sour cream all around it. Have a tortilla server full of warmed flour shells, and heat the hard shells as needed.

You can also have smaller crockpots with refried beans or spanish rice as sides.

Have plenty of napkins, and a place to sit, and let people eat as they get hungry.

  3. Chili is perfect, but any casserole or chili would be messy to eat, especially if it's a buffet and they're standing around....

Why not set out a platter with sliced deli meats & cheese; an assortment of rolls, and condiments.  Let them make their own sandwiches.  Or, buy a 6-foot submarine sandwich.....

  4. SIMPLE SKILLET DINNER

1 (20 oz.) can pineapple tidbits

    2 c. ham strips

    2 tbsp. butter

    Water

1 pkg. (6 1/2 oz.) long grain and wild rice mix

    1 tbsp. minced parsley

Drain pineapple, reserve syrup. In large skillet saute ham in butter until lightly browned. Add enough water to pineapple syrup to make 2 cups liquid; add to skillet. Stir in contents of rice mix. Bring to boil. Cover, simmer 5 to 10 minutes until liquid is absorbed. Fold in pineapple. Sprinkle with parsley to serve. Serves 4.

The hardest part is rolling out the dough, but I make this all the time and everyone loves it. It is also "party friendly"

  6. Seven Layer Taco Dip

  7. everybody loves nachos if you can just bring a snack. load up on the cheese and mix a bit of salsa in too.

or if  you want more of a meal i would suggest (i don't remember what they are called) but they are a mexican food that is just like some meat wrapped up in a little hard shell and fried or something. i don't know how hard they are to make but you can but them in the frozen food section. and since they are wrapped in a tortilla they are neat and easy t eat.
