Simple (little prep) meal for tonight?

I'm looking for a really simple meal to make tonight that has little prep.

Simple ingredients, possibly with chicken or beef.

Something that won't take me too much time.

  1. Cook up some white rice or brown rice. Sautee vegetables such as zucchini, peppers, broccoli, etc. Cook up the chicken or beef - your choice. Put the rice in a bowl and mix in the veggies and meat. Enjoy!

    I have made this again and again, it's great for those days that you arre too tired to cook!



    1 Fryer Cut Up

    1 Tablespoon Margarine

    1 Medium Size Onion Sliced

    1/8 Cup Water



    Melt margarine in frying pan. Brown chicken and remove from pan. Pour off excess margarine / layer chicken in pan. Add water and onions. Let simmer approximately 1/2 hour.

    4-6 Servings

  3. Hamburger helper (or chicken helper). That gives you a lot of options. Zatarains also has some good rice mixes too for chicken, beef, and smoked sausage.  

  4. Chicken cutlets are simple and easy.

    Just take some boneless skinless chicken b*****s, and place them in a folded piece of saran wrap (or wax paper), and pound em flat with a pan or rolling pin.  

    Take about 1/2 a cup of flour and put it in a plate.  Sprinkle salt, pepper, and some italian seasoning in the flour, some red pepper if you like heat.

    Crack an egg and whisk it up in another plate.  

    Dip the chicken in the egg, then in the flour, and fry it up in the pan you used to pound em out.  About 3 minutes on each side on medium heat... make a simple salad or some canned veggies (like corn) with some butter as a side...

Lay some chicken in a pan.  Put sliced carrots and cut up potatoes all around it.  Sprinkle it with salt and pepper or seasoned salt.  You can also spread a can of condensed mushroom or cream of chicken soup over the chicken if you like.  Put the pan in the oven and bake at 350 degrees F for 45 minutes.  Go watch TV until done.  Take out and eat.  Delicious and easy!

I fixed a pasta dish really quick the other night... cubed up one large chicken breast and fried in a pan with olive oil and seasoning..cooked pasta and then when it was done combined it with 1 can of cream of mushroom soup and 1 can of cream of chicken soup and added some water to thin it out..added some shredded cheese and greenbeans or peas whatever you like. It was done in like 15 minutes. Add some garlic bread and a side salad if you want but I didnt.

  10. Pasta with meat sauce:

    This takes a little while in the oven, but the actual prep is only 15-20 minutes once you get the hang of it, especially if you have 2 burners on your stove!

    Brown a pound of beef in a pan while boiling some ziti or penne in a pot. Once the beaf is browned drain the grease (or keep it in, my mother hated the taste of grease and she taught me to drain it), and mix in marinara sauce, as well as some mozzarella and parmesan cheese. Then, mix the pasta and the meat sauce together in a baking pan, and sprinkle the top with more mozzarella and parmesan cheese. Cover with aluminum foil and bake at 350 for 35-40 minutes. Feel free to cut up some Italian bread to go with it.

    Tacos:

    Brown some beef in a pan, and pour in a store bought taco mix, as well as water and whatever ingredients the mix indicates. Put out some tortillas, and bowls with cheese, tomato, lettuce, sour cream and salsa. Let people combine amounts as they wish.

    Meatloaf:

    Take a pound of ground beef and place it in a bowl. Mix in an egg and a half cup of breadcrumbs (very important, it helps keep the meatloaf together!), as well as a half cup of parsley, a dash of garlic, salt and pepper, and a squirt of ketchup. Place it in a greased meatloaf pan and cook for 45-55 minutes. You can boil some green beans and cut up a cantalope or watermelon or something to go on the side.

    Chicken Quesadillas:

    Cut up boneless chicken b*****s into small pieces, and cook in a pan with just enough canola oil to cover the bottom. Once cooked add in store box chipotle mix (or whatever else you find that might fit your fancy) and a can of crushed tomatoes. Use a second pan to place in a buttered tortilla (face down) and sprinkle in some cheese (chedder or mozzarella or whatever else you like) and then some of the chicken/tomato mixture on ONE HALF of the tortilla. Then fold the uncovered half over onto the half with the meat, and hold it there with a spatula. Once the side facing down is toasted, flip it over and toast the other side. Then, removed from the pan and cut in 2-4 pieces, based on the size of the tortilla.

    And, probably the easiest:

    Stir-fry:

    Start off with a store-bought stir-fry mix (I personally prefer teriyaki, but there's also barbeque, sweet and sour, etc) and make sure you have the ingredients needed (usually just water). Then take the chicken or beef and cut it into strips. You can start with meat already cut into strips at the store to make it even easier, but I don't because it's usually a little more expensive. Place it in a pan to cook with just enough canola oil to cover the bottom. Then, add in slices of peppers (green, red, yellow, whichever you prefer), a can of tomato chunks,  green beans (probably a good idea to boil them lightly first!), diced carrots, squash, and whatever other vegetable you like. Stir in mix, and voila! It's done. You can eat it like that, or put it in a wrap with cheese and have a stir-fry wrap. This is nice because you can use chicken, beef, pork, or tofu, and you can use whatever veggies you like!
