Simple recipe for chicken skewers/kabos with peanut sauce?

My friend made these with me a few years ago, but I forgot the recipie. It was very simple, but all the ones I have found online seem to involve more ingredients than I remember. Any suggestions?

  1. This recipe is called  chicken satay  with peanut sauce.

    1 1/2 lbs. boneless and skinless chicken breast

    2 tbsp      sesame oil

    2 tbsp      corn oil

    1/4 cup dry sherry

    1/4 cup soy sauce

    2 tbsp. lemon juice

    1 1/2 tsp. minced garlic

    1 1/2 tsp  chopped ginger

    1/4 tsp salt

    cut chicken in 1/2 inch wide strips.combined all the ingredients and marinate them for  2 hours  in refrigerator.

    PEANUT SAUCE

    4 tsp corn oil

    2 tsp. sesdame oil

    1/2 cup minced onions

    2 tbsp chopped garlic

    1tbsp  brown sugar

    1/3 cup peanut butter

    1/2 tsp ground coriander

    3 tbsp  soy sauce

    3 tbsp catsup

    1 tbsp lemon juice

    1/2 tsp  ground pepper

    Heat  oils in the sauce pan.sauteed garlic and onions til they are softened.Add sugar and vinegar,cooking til the sugar dissolves.

    Remove from heat  and stir the remaining ingredients.

    Preheat the oven in 375 degrees Fahrenheit.Thread chicken strips in small skewers and arrange then in one baking sheet.Bake approximately 10 minutes or until   just  cooked  through.Served hot with sauce which is at room temperature.


  2. ((modify the recipe for the amount you need))

    For the peanut sauce

    2 tablespoons smooth peanut butter

    2 tablespoons soy sauce

    1-2 cloves garlic, minced or chopped

    1/4 cup water

    1 tablespoon brown sugar

    juice from half a lemon (can be less, depending on your tastes)

    In a non-stick pan, combine all ingredients, stirring constatntly over medium heat until peanut butter has melted. You can do this in the microwave too, for about 30-40 seconds.

    I also do it in this variation

    1 cup smooth peanut butter

    1/4 cup low-sodium soy sauce

    2 teaspoons red chili paste, such as sambal

    2 tablespoons dark brown sugar

    2 limes, juiced

    1/2 cup hot water

    Combine the peanut butter, soy sauce, red chili paste, brown sugar, and lime juice in a food processor or blender. Puree to combine. While the motor is running, drizzle in the hot water to thin out the sauce, you may not need all of it.

    My mom does this one...

    1/2 cup smooth natural peanut butter

    1/4 cup rice wine vinegar

    1 tablespoon water

    Pinch red pepper flakes

    2 teaspoons toasted sesame oil

    2 teaspoons soy sauce

    1 teaspoon sugar

    Whisk together peanut butter, vinegar, water, pepper flakes, sesame oil, soy sauce, and sugar in a bowl. If the dressing is still too thick you may add more water.

    So there all basically all the same ingredients give or take. lol

    As for the Chicken, The peanut sauce is more than enough flavoring for me so I don't season them separately  with anything but Salt & pepper. Pop um on the skewer grill till' there a little browned then I baste mine with the sauce, however you, can marinate them in it or put them on the grill with the sauce. or serve it on the side.

  3. Easy Satay sauce:

    225g crunchy peanut butter

    300ml coconut milk

    1 teaspoon dried chilly flakes (more or less depending on taste)

    2 teaspoons brown sugar

    1 teaspoon lemon juice

    Bring all the ingrediants to a boil in a pot while stirring. switch down heat and leave to simmer for 5 minutes. The sauce will become a little darker and the oil from the peanut butter will start to separate. Serve over chicken b*****s.
