  1. Your jam may not set properly. This is because the pectin to acid ratio may not be correct. Don't worry, though. If the jam does not set, just put it back into a pan, reboil, add the lemon juice, and rebottle.


  2. 75 grams sugar ( Caster, Granulated or any other except Icing sugar)

    75 grams butter or margerine

    75 grams plain flour

    A little milk

    Cream the sugar and butter together, add in the flour and mix to a dough, add some milk if the mixture doesn't bind together. Bake in a preheated oven of 180 degrees celsius or higher for 10 - 15 minutes until golden brown.

    1.3/4-2c. flour

    1tbls. baking powder

    1/2 tsp. salt

    Cut in 1/3 c. Butter (i use a fork)

    Stir in 3/4 c. Milk.

    Knead 20 times on a floured surface.

    Roll out, cut.

    Bake 10 min @ 450*

    I make these w/ my kids a lot because there are no eggs.

  5. INGREDIENTS:

    2 cups all-purpose flour, stirred before measuring*

    2 1/2 teaspoons baking powder

    1/4 teaspoon baking soda

    1 teaspoon salt

    1/4 cup lard or vegetable shortening, chilled

    2 tablespoons butter, chilled

    3/4 cup buttermilk

    PREPARATION:

    Heat oven to 450°. Adjust oven rack to center position.

    In a large bowl, combine flour, baking powder, soda, and salt. Cut in chilled shortening and butter until you have pieces the size of small peas. Make a well in center of dry ingredients; pour in buttermilk. With a wooden spoon, gently blend dry ingredients into the buttermilk, just until mixture is clumping together. If necessary, add a few more teaspoons of buttermilk.

    Transfer dough to a lightly floured board. Pat out in a circle about 8 inches in diameter and 1/2-inch thick. Using a 2 1/2 to 3-inch biscuit cutter, cut out and place on ungreased baking sheet. Bake on center oven rack for about 10 to 12 minutes, until tops are browned.

    Makes 10 to 12 biscuits, depending on size of cutter.

    *For the lightest biscuits, use a Southern white all-purpose flour if available.

    2 CUPS SELF RISING FLOUR

    1 CUP  WHIPPING CREAM

    MIX TOGETHER  DOUGH WILL BE STIFF   KNEAD A MINUTE OR TWO ON A FLOURED SURFACE.. ROLL OUT AND CUT, AND BAKE FOR 10 TO 12 MINUTES AT 450 DEG..
