Question:

Simple vegan dish?

I'm having a cook-out this weekend, and one of my good friends is vegan.

I'd like to make him a seperate dish, but I honestly don't know where to start. I am definitely no chef, so something relatively simple would be great. I'd like this to be a main course, not just a side.

  1. French lentil salad:

    •2 cups dried French green lentils

    •2 large carrots, shredded

    •1 medium red bell pepper, diced

    •3/4 cup pitted kalamata olives, chopped

    •1/3 cup chopped parsley

    •4 cloves garlic, minced

    •4 Tbs. balsamic vinegar

    •1/3 cup toasted walnuts, coarsely chopped

    •Olive oil as needed

    1.Bring large pot of water and lentils to a boil. Cook lentils until just tender, about 20 minutes. Drain any excess water. Transfer lentils to large serving bowl.

    2.Add carrots, bell pepper, olives, parsley and garlic, and stir well.

    3.Stir in balsamic vinegar and walnuts, and salt and pepper to taste. Drizzle oil over salad to taste.

    More info:

    Chop up ripe tomatoes and add them to this tasty salad. Leftover lentil salad makes a great lunch the next day.

    Menu plan: Serve the lentils on a bed of mixed baby greens drizzled with an olive oil vinaigrette.

    I haven't tried it yet, but it looked nutritious and tasty.  :)

  2. Pesto Pasta. Minimum effort Maximum taste.

    Pasta (any type)

    4x small mushrooms(chopped)

    Red Pesto (half a jar)

    1x yellow pepper (chopped and seeded)

    1/2 onion(chopped)

    Cook pasta and drain, fry yellow pepper,onion and mushrooms in 2 tablespoons of olive oil, add to pasta and mix in pesto. DONE!

  4. Grill Tofurky sausages on the grill! You should be able to find them at a big health food market.

    And for fun, get a jar of Veganaise and make a potato salad just for the vegan friend. Veganaise is also at the health food store and it will be in the cooler as it needs to be refrigerated, but it is a type of mayonnaise substitute. Just leave out the eggs and portion out a bit of the potato salad veggies and mix with the Veganaise.

    A can of baked beans (Vegetarian style) should be good too! Just make sure they don't use honey in the ingredient label (brown sugar is usually used, and that is usually vegan).

  6. Here is a recipe that I came up with myself.  It's not just something I found on google.  It's tried and true and there are a lot of people who like it!  Thanks for caring enough for your friend to make sure they have something to eat!

    You may actually find that you too like this vegan chili!

    The ingredients are 1 bag of Morningstar Farms ground, 1 large can of crushed tomatoes, 1 can of chili magic, a chichi's corn cake packet and a can of cream corn.

    In a large pot, combine all the ingredients except for the corn and the corn cake mix. Heat until boiling and let it boil for like 8 minutes and it's ready.

    Follow the directions on the corn cake mix and heat it in the oven. It's better to start the cake first because it takes a lot longer. You can time it out right after practicing though.

    When both items are done, fill a bowl with half corn cake and half chili. Take a little corn bread and a little chili with each bite. Trust me, you can't go wrong with this recipe.

    It's completely cruelty free, and it only costs about 11.50 to make it. It serves 4 people with too much and probably 6 if you eat normal portions.
