Simple vegetarian recipes?

I am a college student and dont have a lot of money to spend at the grocery store...

what are some simple recipes that are easy and quick to make? Also what is the best meat replacement brands out there?

  1. If you are still a college studentr, might I still recommend the dorm cafeteria, where you'll get a wide variety of foods to eat, and if you are really vegetarian they'll even give you yogurt over the meat dish. I still sometimes moon over all the free milk and juice I drank there.

    Pita bread with falafel, avocados, & hummus.

    Vegan chili made with black beans, kidney beans, corn, green beans, chili sauce, taco seasoning, tomatoes, green peppers & onions.

    Baked/fried/BBQ tofu, seiten, TVP, or tempeh.

    Cook and fry a large portobello mushroom and make a burger.

    Stir fry and season rice/couscous/quinoa, beans, and vegetables.

    Bean, rice, & veg cheese burrito, taco, or quesadilla.

    Pasta or potatoes (scalloped, mashed, fried, baked, etc) with nutritional yeast cheese sauce. http://www.ivu.org/recipes/italian/sauce...

    Sandwiches (like tempeh lettuce & tomato, tofurky cheezsteak, roasted vegetable etc).

    Breaded or stuffed mushrooms

    Soup, tomato, butternaut, creamy mushroom, black bean, etc.

    Pasta, basic with sauce and vegetables with oil and seasoning

    Grilled seiten steak with mash potatoes and gravy

    Mashed cauliflower or potatoes with seasoning and vegetables

    Vegan bagel pizzas, with bagel, vegan cheese, pizza sauce and veggies and cook in oven, or instead of bagel use french bread

    Peanut butter with rice and veggies, or toasted bread/bagel, on toasted bun with fried bananas

    Toasted vegan cream cheese bagel with herbs and tomato

    Make tofu fillets or cutlets breaded with sauce

    Quick casserole, mix your favorite veggies chopped together with olive oil and fry, add nutrional yeast sauce; with vegan margarine mix together with breadcrumbs and put in a cooking dish poor mixed veggies onto it and then cover with more of the breadcrumb mix and top layered with green beans and cook for 10-40m or replace breadcrumbs with pasta of your choice

    Easy vegan mac and cheese, cook pasta of your choice, make vegan cheese sauce and pour of cooked pasta.

    Make a burger with either pre-made vegan burger patties or cooked portobello mushroom or cooked mushed mixture of vegetables or beans and add your favorite fillings, or make sloppy joes with a cup of cooked TVP covered in BBQ sauce in a cup of water, mix onions, tomato, bell peppers, etc cook until done serve on top of buns

    Vegan sushi with brown rice, white rice, couscous, or quinoa, vegetables of your choice, maybe tofu, tempeh, portobello mushrooms or seitan and wrap in nori, roll and cut

    Paprikash, cook your favorite vegetables with favorite legumes and add a lot of paprika and onions and green bell peppers

    Chinese fried rice, fry brown rice and vegetables in a skillet with olive oil and add soy sauce or Bragg's liquid aminos and liquid smoke

    Vegan hot dogs, cook Smart Dogs or another brand of vegan hot dogs and put in a hot dog bun with your favorite condiments, even make chili dogs or frito pie

    Vegan fish tacos, grill tofu and wrap in seaweed dazzle with olive oil and wrap in tortillas with lettuce and dressings of your choice

    Bake a potato add your fixings, make a BBQ potato with BBQ sauced setien, a broccoli and cheese potato with broccoli, vegan cheese, and vegan butter, etc

    Cook cauliflower, squash, broccoli, and peas together, mush slightly add vegan cream cheese, or vegan sour cream, or vegan butter

    Power vegan smoothie with fresh fruits of your liking, plant milk, bananas or tofu, flaxseeds, pumpkin seeds, and maybe a sweetener of your choice; you can also add nuts, spirluna, protein powder, etc

    Quick vegan waffles or pancakes with syrup, vegan butter or vegan cream cheese, and fruit

    Cereal or oatmeal with fortified alternative to milk (such as soy milk, almond, rice, hemp, etc), with nuts and fruits on the side (or mixed in!)

    Tempeh bacon with tofu scramble

    Lunch/Dinner

    - bean and rice burrito (whole wheat tortilla, brown rice)

    - natural peanut butter sandwich on whole wheat bread (with mashed raspberries, strawberries or slices of banana or apple)

    - brown rice and steamed or stir fried vegetables

    - veggie pizza on whole wheat crust (home made is cheaper)

    - fried rice (leftover rice sauted with vegetables of choice-frozen bagged work well-scramble in an egg if you want, then add soy sauce and done.

    - spaghetti with sauce (jarred sauces are cheaper than making your own, and way easier, you don't have to buy all the spices)

    - baby carrots, snap peas, celery, peppers to go with it lunch

    whole wheat pizza crust:

    1 1/4 cup all-purpose flour

    1/2 cup lukewarm water

    1 tablespoon yeast

    1 teaspoon salt

    2 tablespoons vegetable oil or melted margarine (both work fine)

    Directions:

    Preheat oven 425 degrees. Mix the yeast with the lukewarm water untill the yeast is disolved. Let it stand for a couple minutes. Add the salt and vegetable oil/melted margarine. Mix. Add the flour, and mix. Roll out the dough. Put it in the oven for 5 minutes. Take it out and rub margerine over it. Add toppings, and cook for 10-15 more minutes.

    Serves: 1-2

    Preparation time: 20 min.

    - Just put on some spaghetti sauce and an assortment of veggies, like sliced zucchini and broccoli.

    - cheese is pretty fattening and I'd advise against it, plus it's expensive

    Baked/Fried Eggplant

    thinly cut some eggplant, dip it in fat free italian dressing, then dip those in breadcrumbs then put them on a baking sheet. Bake them at 400 degrees for 10 to 15 minutes (till crispy/brown) eat like that or with marinara is good. You could even add some whole wheat pasta.

    add some raw nuts or seeds to salads for protein and omegas

    Sweets/Desserts

    sorbet is cheap and pretty healthy

    or muffins:

    1 1/2 cups whole wheat flour, 1/2 cup sugar, 1 t salt, 2 t baking powder, 3/4 c soy milk, 1/4 c applesauce, 1 cup frozen blueberries (add cinnamon with this combo so good) OR 1 cup sliced banana, OR 1 cup shredded carrot

    Directions:

    Preheat oven to 400F. grease muffin pan/add muffin cups

    mix dry ingredients, add wet ingredients and mix. Fold in whatever filling you choose. (stir in gently)

    Pour into baking cups and bake for 25-30 minutes. (makes 8)

    for a salty fix (but cheaper than chips):

    rinse and dry kale, rip into chip size pieces, toss with a little olive oil and vinegar (optional), add a little bit of salt/sea salt

    spread over baking sheet, roast for about 10 minutes or less at 375 degrees, or until crispy.

    also you can make your own chips with tortillas

    ***I like boca, including their boca crumbles which you can use on pizza or in place of beef in hamburger helper (which is cheap) and lasagna and stuff

    their burgers are really good too

  5. My favorite brand is Boca. They have a lot of quick, easy things to choose from. My favorites are the flame grilled 'burgers', and the spicy 'chicken'. Also Tofu is really good. ^_^ Here are a couple of websites that have some great recipes:
