Sinigang recipe?

What's a really good recipe for traditional Filipino sinigang? I want to use pork or beef (or both). I looked online and there are so many different variations and I don't know which I should try. Does anyone have a favorite recipe? Thank you!

  1. Boil 4 cups water with 1/2 cup sliced onions and 1 cup sliced very ripe tomatoes. Add meat, simmer until meat is tender. Add sliced eggplant, string beans, mustard leaves or kale, okra.  Simmer 5 minutes. Add Sinigang Mix, available in Asian stores. Season to taste. Just before serving, taste the soup again as the veggies and meats will have absorbed some of the salt and sinigang flavor. Season again.


  2. Pork Sinigang

    Servings: 1 recipe

    Prep. Time: :30

    Total Time: 1:30

    Ingredients:

      

    2 .2 lbs pork belly* or ribs, cut into 1.5 inch cubes or 2-3 inches long for individual ribs

    1 lg. onion, coarsely chopped

    4 to 5 md. Roma tomatoes, coarsely chopped

    4 to 5 sm. taro roots, peeled and cut into approx. 2 inch cubes **

    1 bunch string beans or snake beans, cut into 2.5 inch long pieces, rinse

    1 white radish or daikon, peeled and cut cross-sectionally about 1/4 inch thick

    1 md. eggplant, cut into three section across its length and cut each section into 6-8 portions (like a pizza) ***

    1 bunch kangkong leaves and stem, bottom quarter of stems cut and discarded, the rest cut into 3 inch long pieces ****

    2 to 3 lg. chili peppers (Hungarian if you do not want it spicy or Cubanelle if mild or Serrano if spicy)

    3 to 5 okras, cut in half cross-wise (optional)

    1 pkg. tamarind soup base (available in oriental stores)

    Fish sauce and salt to taste



    Directions:  

    Combine the pork, onion and tomatoes in a large pot and add water enough to cover. When boiling turn down the heat to slow simmer. You may add a teaspoon of sugar to lessen the "bite" or tanginess of the tomato. Simmer for about 45 minutes or until the meat is tender.

    Add the taro cubes and bring to boil for about ten minutes. Add the string beans and boil for about 5 minutes. You may add the okra together with the string beans if using it. Add the daikon and let boil for another 5 minutes. You may now add the tamarind soup base powder and dissolve by gentle stirring. You may use more if you want it more sour. Put some fish sauce (if you want this to be more authentic) or salt to taste. Add the eggplant and chili peppers and let boil for another 5 minutes then add the kangkong or spinach leaves and cook until this is cooked. Adjust salt as desired. Served with steamed/boiled Jasmine rice.

    Filipinos typically eat this by adding some soup into the rice and adding some fish sauce to taste and eating the meat and vegetables like main course together with the rice. Soup is sipped on the side.

    Beef & Pork Sinigang

      

    Ingredients:

    2 lbs Beef, cut in pieces

    1/2 lbs Pork, cut in pieces

    2 Ripe tomatoes

    3 Chopped radishes

    1/2 cups Tamarind fruit

    2 cups Kangkong leaves

    8 cups Rice Water

    1/4 tsp Patis

    1/2 tsp Fresh ground pepper  



    Instructions:

    Place tomatoes and tamarind into a saucepan with the rice water, bring to a boil, add beef and pork, be sure to remove the skin and seeds from the tamarind once it has softened. You can then add the rest of the ingredients, and cook for 20 minutes. Serve seasoned with patis and freshly ground pepper.

    Sinigang na Baka

    INGREDIENTS

    2 tablespoons canola oil

    1 large onion, chopped

    2 cloves garlic, chopped

    1 pound beef stew meat, cut into 1 inch cubes

    1 quart water

    2 large tomatoes, diced

    1/2 pound fresh green beans, rinsed and trimmed

    1/2 medium head bok choy, cut into 1 1/2 inch strips

    1 head fresh broccoli, cut into bite size pieces

    1 (1.41 ounce) package tamarind soup base

    DIRECTIONS

    Heat oil in medium stock pot. Saute onion and garlic until tender. Add beef to pot, and saute until browned. Pour in water. Bring to a boil, reduce heat, and simmer 20 to 30 minutes.

    Place tomatoes and green beans in pot, and continue to simmer for 10 minutes. Stir in bok choy, broccoli and tamarind soup mix. Simmer for an additional 10 minutes.

  3. don't cook pork and beef at the same time. it's either the beef will be tough or the pork will come in pieces. They have different cooking time.

    Sinigang:

    In a pot, boil the following together

    2lbs pork or beef

    2Liters of water

    2-3Tbsp fish sauce (patis)

    1 medium onion

    In a different pot, boil unripe (green) tamarinds in water. Save the sop.

    As soon as the meat is tender, add the following

    2 tomatoes

    4-5 pcs of green finger chillies

    1 daikon (asian radish) peeled and sliced like coins

    1 cup of sitaw - asian beans

    a few handful of leaves of swamp cabbage or sweet potato tops

    Then add tamarind sop.

    You can substitute fresh tamarind with tamarind mixes.

    Don't mistake it with TOM YUM paste or powder. The taste will be different. Tom yum is Thai. It is also made with tamarind but it also has garlic and chili in it
