  1. Ask your ski shop retailer for the best choice. You also need to adjust your ramp raise for your skiing technique and leg alignment. Each ski & binding package must fit you for the best performance. Choosing the binding on the brake width alone will not get you the best setup for your skiing.  The time when you could buy a pair of skiis from one shop and a pair of bindings from a rep, and your boots from a warehouse and have the whole package work 100% for you are long gone. Start with the boots and then a good boot fitter for the foot beds and alignment. Then have the binding ramp adjusted for your stance on your skiis. The ski length and width, flex pattern and purpose are the last of the package.  Once you get all of the items fine tuned, you will have a set that will last for many 100's of days as long as you keep them tuned and don't break them.

If you have a 84 mm brake area on your skiis, I doubt the 80 mm brake will properly release and stop the ski when it should.  So try the 100mm, that is only 8mm on each side, less than 3/8 of an inch.
