Question:

Skin of fish has turned yellow?

I'm thawing some frozen Mahi Mahi filets and they still have the skin on one side. Part of the skin has turned yellow. Is this bad? Can the fish still be eaten?

  1. Steaks and fillets should glisten and be of a bright, uniform color. Avoid those with streaky flesh that has taken on a brownish cast-these signs indicate that the fish has been sitting in the market a little too long. Good fresh fish should have a brightly colored skin with yellow flecks.
