So many potatoes please help.?

my father in law came back from the market with a big sack of potatoes on saturday and i dont want to waste them so i need some inspiration for recipes for them we are bored of plain old mash,

  1. potatoe and rosemary soup , potatoe and leek soup , garlic potatoes , saute potaotes lyonaisse potatoes , champ (mash with scallions and cream) garlic potatoes , make stews and casserloes use potatoes they are a great natural thickener because they are starchy , loads of stuff just google

  3. Potatoe and Leek Soup:

    35g Butter

    2 leeks sliced

    1 medium onion finely chopped

    2 cloves of garlic crushed

    600g potatoes, peeled and chopped

    3 cups chicken stock

    1 x 375ml of evaporated milk (you can get the low fat one if you want to make the recipe with a lower fat content)

    salt and pepper to taste

    1. melt the butter and saute the leeks, onion and garlic for about 5 - 10mins

    2. Add chopped potatoes and cook for a further 5 minutes

    3. Add stock and simmer uncovered until the potatoes are soft

    4. Take mixture off stove and puree the mixture

    5. Return to the heat and add evaporated milk and salt and pepper

    6. Bring to the boil and serve

    *best thing is you can freeze it if you have left overs

    Why not make potatoe rosti:

    Ingredients (serves 4)

    750g potatoes, washed

    60g (3 tbs) butter, melted

    Salt & ground black pepper, to taste

    1. Place the unpeeled potatoes in a medium saucepan. Cover with cold water and bring to the boil over high heat. Reduce heat to medium-high and boil, uncovered, for 10 minutes. Drain. Allow to cool completely.

    2. Peel and grate the potatoes and place in a large bowl with the butter, salt and pepper. Toss well to combine.

    3. Heat a small (18-20cm base measurement) non-stick frying pan over medium heat. Add the potato mixture and press down firmly. Cook for 15 minutes or until the base is golden brown and crisp.

    4. Slide the rosti out of the pan onto a large board. Flip the rosti over back into the pan so that the golden side is now uppermost. Cook for a further 10 minutes or until cooked through and the base is golden brown and crisp.

    Turn onto a serving plate, cut into wedges and serve immediately.

  4. Hassleback potatoes where you put them on a spoon and cut thin slices acroos the pot but do not cut through, then sprikle with salt pepper and oil and roast until cooked.

    peel pots and slice into thin-ish pieces, do same with an onion then layer slices together in oven proof dish add enough chicken/vergatble stock so pots not fully covered, dot with butter and bake until pots on top golden and cooked through - yummy, cant remember what this is called though...

    cube pots and deep fry them til golden, the toss with sauted onions and bits of bacon

    use them for fish cakes

    cover cold mash in breadcrumbs and make croquette pots

    bubble and squeak!

    dauphinoise potatoes - slice thinly and layer in a baking dish with sliced onion, cover with cream and bake in the oven til the cream sets and turns golden on the top.

    spanish omelette - slice cooked potatoes, saute in a frying pan with onioins, mushrooms, peppers and peas, cover with beaten egg and cook slowly on the hob/under the grill til the eggs set.

    fish cakes - mix salmon and white fish flakes with mashed potato, shape into cakes and fry til golden

Dauphinoise potatoes are great. slice the potatoes really thinly and par boil them in 1/2 milk and 1/2 cream, mean while fry onion and garlic, tip onion and garlic into a caserole dish( like alasagne dish) and lay the potatoes on top. Cover with cheese of your choice! Yum great accompanyment to any meal.

    par boil chips and then freeze them ready to quickly fry at a later date!!

  9. Hi you can make chips, corned beef hash, Jacket potatoes, Cottage pie, Shepherds Pie, Fish Pie. Scollops with a sauce of your choice. There are quite a few things you could make, or have them with different meats etc. You could even make a pie with them meat and potatoe.  

  10. Potato wedges, or shepards pie as this can use up a good handfull of potato's. Fish pie.

    HERB-ROASTED NEW POTATOES

    Yield: 6 Servings

    1 lb 14 oz small red potatoes,

    .unpeeled (or russets)

    1/4 c Chopped fresh basil or 1 tsp

    .dried basil

    1 tb Chopped fresh oregano or 1

    .tsp dried

    1 tb Olive oil

    1/2 ts Salt

    1/4 ts Black pepper

    2 1/4 oz Grated parmesan cheese

    1. Preheat oven to 425F. Cut the potatoes into 6-8 wedges each.

    2. In a large bowl, combine the basil, oregano,oil,salt and pepper.

    Add the potatoes and toss to combine.

    3. Place the potatoes on a nonstick baking sheet and sprinkle with

    parmesan cheese.

    4. Bake for 20-25 minutes of until tender and golden brown.

    VARIATION: Instead of red potatoes, use small Yukon Gold or Finnish

    Yellow potatoes, both of which have yellow flesh. Substitute 2 t.

    chopped dried rosemary for the basil and oregano

  14. potato and leek soup, chips,cheesy mash, jacket, potato wedges, roasts, hot pot with chops and sliced potatoes on the top baked in the oven, cheese and onion pie, let the kids have some to make potato men, get a spud gun if you can get them now,  

  15. You can make jacket potato, boiled potatoes, mash potato and add grated cheese to give it a different taste.  You can also make douphinua potatoes with cream. Make a shepard pie with mincemeat and make the top out of potato. Your can fry them, saute them, lyonnaise them. Hope this helps!

  17. I make a magic potato in the microwave.

    Do not peel....Simply prick it a few times with a fork, then microwave it until soft, cut a cross in it and squeeze it on four sides to let the soft inner push out. Add a dollop of butter and serve with or without a filling/sauce or as a side item with almost any meal...
