Soft cookie dough recipe containing no eggs ?

ok, basically we've run out of eggs, and I decided we were having cookies for pudding (silly me) so anyways, anyone know a yummy recipe with no eggs? =)

  1. You could also use a recipe that you like and substitute:

    mashed bananas

    apple sauce

    blended silken tofu

    "energe" egg replacer


  2. Butter Pecan Cookies

    Yield: 12 cookies

    ¾ cup pecans

    ½ cup (1 stick) unsalted butter

    1/3 cup granulated sugar, plus more for coating

    1 tsp. vanilla

    1/8 tsp kosher salt

    1 cup A/P flour

    Preheat oven to 350ºF.  Toast pecans until fragrant, about 6 minutes.  With an electric mixer, cream butter and 1/3 cup sugar until light, about 1 minute.  Beat in vanilla, salt, and flour, scarping sides down, beating just until dough comes together.  Too much beating will make a less tender cookie.  Fold in toasted pecans.  Divide dough into 12 pieces, rolling each into a ball and then rolling each ball into sugar.  Place 3” apart on a baking sheet, and flatten w/ the bottom of a glass.  Sprinkle tops with more sugar.  Bake until golden brown, rotating baking sheet half-way through, about 15 min.  Sprinkle w/ a bit more sugar while hot, remove to wire rack to cool.

    (So leave the nuts out.  This is not a "soft" cookie recipe, though... just skip it, I guess)

  3. Eggless oatmeal raisin cookies

    2/3 c. (1 1/3 sticks) butter, softened

    1 1/4 c. granulated sugar

    1/2 c. milk

    1 tsp. vanilla

    1 1/2 c. flour

    1 tsp. baking soda

    1 tsp. cream of tartar

    1/2 tsp. salt

    2 1/2 c. uncooked quick oats

    1 ½ c. raisins

    Mix all ingredients together. Mix well. Chill. Roll into small balls and place on greased cookie sheet. Flatten with bottom of glass dipped in sugar. Bake 9-12 minutes in a 350 degree oven.

    Yogurt Chocolate Chip Cookies

    INGREDIENTS

    1/2 cup packed brown sugar

    1/2 cup white sugar

    1/4 cup margarine or butter

    1/4 cup shortening

    1/2 cup plain nonfat yogurt

    2 teaspoons vanilla extract

    1 3/4 cups all-purpose flour

    1/2 teaspoon baking soda

    1/2 teaspoon salt

    2 cups semisweet chocolate chips

    DIRECTIONS

    Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.

    In a medium bowl, cream together the brown sugar, white sugar, margarine and shortening until light and fluffy. Stir in yogurt and vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until incorporated, then mix in chocolate chips. Drop by rounded teaspoonfuls 2 inches apart onto the prepared cookie sheets.

    Bake for 8 to 10 minutes in the preheated oven, until the edges begin to brown. Cool for a minute on the cookie sheets before removing to wire racks to cool completely.
