  2. Chocolate Almond Pastries

    Prep Time: 20 minutes

    Cook Time: 10 minutes

    Ingredients:

        * 2 crust pkg. refrigerated pie crusts, or homemade pie crusts

        * 1 cup ground almonds

        * 1/2 cup powdered sugar

        * 1 egg

        * 1 cup semisweet chocolate chips, divided

    Preparation:

    Let pie crust pouches sit at room temperature for 15 minutes. If using homemade crusts, chill for 1 hour after rolling into circles. Melt 2/3 cup of the chocolate chips in small saucepan over low heat. Combine ground almonds, powdered sugar, egg, and melted chocolate in a small bowl and mix well until combined.

    Preheat oven to 425 degrees. Unfold pie crusts and peel off top plastic sheets, then press out fold lines. Remove remaining plastic sheets. Cut each crust into 16 wedges. Place a scant 1 tsp. chocolate mixture on wide end of each wedge, and roll up, starting at wide end and rolling to opposite point. Place point side down on ungreased cookie sheets.

    Bake the pastries at 425 degrees for 8-12 minutes or until light golden brown. Cool completely.

    Melt remaining chocolate in small saucepan over low heat. Drizzle over cooled pastries. Makes 32 pastries.

  3. Profiteroles

    Episode:   Bringing the Magic Home

    1 cup milk

    1/4 pound (1 stick) unsalted butter

    Pinch kosher salt

    1 cup all-purpose flour

    4 extra-large eggs

    1/2 cup heavy cream

    12 ounces semisweet chocolate chips

    2 tablespoons honey

    2 tablespoons prepared coffee

    Good vanilla ice cream (recommended: Haagen-Dazs), for serving

    Preheat the oven to 425 degrees F.

    Heat the milk, butter, and salt over medium heat until scalded. When the butter is melted, add the flour all at once and beat it with a wooden spoon until the mixture comes together and forms a dough. Cook, stirring constantly, over low heat for 2 minutes. The flour will begin to coat the bottom of the pan. Dump the hot mixture into the bowl of a food processor fitted with the steel blade. Add the eggs and pulse until the eggs are incorporated into the dough and the mixture is thick.

    Spoon the mixture into a pastry bag fitted with a large plain round tip. Pipe in mounds 1 1/2 inches wide and 1-inch high onto a baking sheet lined with parchment paper. You should have about 18 puffs. With a wet finger, lightly press down the swirl at the top of each puff. (You can also use 2 spoons to scoop out the mixture and shape the puffs with damp fingers.) Bake for 20 minutes, or until lightly browned, then turn off the oven and allow them to sit for another 10 minutes, until they sound hollow when tapped on the bottom. Make a small slit in the side of each puff to allow the steam to escape. Set aside to cool.

    For the chocolate sauce, place the cream and chocolate chips in a bowl set over simmering water and stir just until the chocolate melts. Add the honey and coffee and stir until smooth. Set aside.

    For serving, cut each profiterole in half crosswise, fill with a small scoop of ice cream, replace the top, and drizzle with slightly warm chocolate sauce.

  5. NAPOLEONS! These are by far the greatest.

    Ingredients:

    1 pkg. Pepperidge Farm frozen puff pastry

    1 package Jello vanilla pudding

    2 c. cold milk

    1 pkt. Knox UNFLAVORED gelatin

    8 oz. Cool whip

    6 oz. chocolate, melted (white**, semi sweet or both)

    **If using white choc, melt a baking bar NOT chips.

    Directions:

    Partially thaw package of Puff pastry dough, separate the six rectangles and bake as directed. Then, mix up a package of Jello vanilla pudding, as directed. Also, soften a packet of gelatin in 2 Tbsp. water to dissolve, microwave 30 seconds, and whisk into the gelatin. Quickly add the Cool Whip.

    Top 3 cooled pastries with the pudding mixture, and then cover with the remaining 3 pastry rectangles. Drizzle over with white and/or semi sweet melted chocolate, then pop in the freezer for 1-2 hours to set up before cutting each of the 3 rectangles into 3 squares. Makes 9 Napoleons. ENJOY!

  6. get some frozen puff pastry and some peaches or any other fruit the same fruit jam. (eg if u use strawberries get strawberry jam) cut the thawed puff pastry into rounds and put sliced fruit on top. heat the jam in microwave and brush on top. bake in oven until pastry is cooked. serve with icecream and more heated jam if desired.yum yum

  7. My fave is a warm banana and chocolate parcel. Its a decadent simple dessert where the oozing warm chocolate from the crisp puff pastry tastes so good served with whipped cream or vanilla ice cream Here's the recipe:

    1 puff pastry sheet

    4-6 pieces of good quality chocolate per parcel (dark, white or milk, hazelnuts, whatever your choice is!)

    OR Nutella

    1 ripe banana, cut into slices

    Preheat oven to 220 degrees Celsius.

    Cut the pastry into 4 equal squares (2-3 inches).

    Place a few banana slices in the middle of a square and top with pieces of chocolate or nutella.

    Fold over the pasty and squash the ends to close. (can use a bit of milk on the sides to this).

    Brush with a little milk on top and bake in oven until golden brown. (around 20mins).

    Serve with yummy vanilla / chocolate / strawberry or butterscotch ice cream. Enjoy!!
