I am going to a family reunion on sunday. It is pretty far away, so I am staying at my grandmothers the night before. Now that I am considered an adult ( I have a child ) means I have to bring something. What can I make that is easy enough to do it at someones else's house and last a 4 hour trip. Also I am not Betty Crocker here. Something easy

  1. think your best bet would be to visit a fruit market in the area and purchase some fruit ........make up your own sliced  fresh fruit platter,  even watermelon cut in squares will adjust any ones appetite at a picnic or reunion,  and real easy to do too.

  2. mac and cheese!

  3. There are several things you can make and put in cooler for the trip.  Fruit salad, 7 layer salad and my favorite Broccoli Salad.  That's been a hit around my friends and family lately.  In fact, you can find it certain grocery stores that have salad bars.

  4. I'm a chef with my own large cooking group on eons.com. Here is an easy cake recipe that is incredibly delicious, and will impress everyone. Trust me, you can do this, even if you're an amateur.

    INCREDIBLY DELICIOUS COCONUT CAKE

1 box of Duncan Hines White, or Coconut cake mix

    1/2 cup sour cream

    1 tsp vanilla

    Frosting:

1 8 oz pkg cream cheese at room temp.

1 stick of butter at room temp

    1 tsp vanilla

    1 box of powdered sugar

    1 pkg angel flake coconut

    Directions:

Preheat the oven to 350 deg. F.  Grease and flour a 13x9 inch baking pan (a layer cake won't travel well).

In a large bowl, mix the cake according to directions on the box; add the sour cream and vanilla, and mix well.

Pour the batter into the prepared pan, and bake approximately 55 min., or until it springs back when pressed in the middle.

Remove from oven and let cool completely before frosting.

    Frosting:

In a large bowl, beat together the cream cheese, butter, and vanilla until light and fluffy. Add the box of powdered sugar and beat until completely incorporated and fluffy.

Frost top of cooled cake. Sprinkle the entire top with a goodly amount of the Angel Flake coconut.

*This cake needs no refrigeration, and will travel well if you cover it with double layers of plastic wrap.

  5. OREO COOKIE CAKE

1 pkg. Super Moist cake mix

    3 eggs

    1 1/4 c. water

    1 stick butter, softened

1 c. coarsely chopped Oreo cookies (about 12)

    1 tub vanilla frosting

Heat oven to 350 degrees. Grease and flour 2 cake pans. Beat cake mix, eggs, water and butter on low for 30 seconds. Beat on medium for 2 minutes. Reserve 2 tablespoons cookies for icing. Fold remaining cookies into batter with spoon.

Bake 30-35 minutes. Cool 10 minutes in pans. Remove from pans and cool completely before icing. Crush cookies for icing very fine. Mix into frosting and spread on cake.
