Something new for the new year of school lunches ?

Heeey everyone .. as we all know it is back to school in like a week and i am actually excited, but last year all i ever had was sandwhichs and pizza pops. .same old. Since it is a new year i want something new .. something differnt, something healthy :D help please very soon

  1. Pita bread with anything.

    Like:

    Pb&?

    Cream cheese, celery and sultanas

    Falafal and salad

    egg salad, with lettuce and bacon

    (last night's pizza, I've done it myself shhh)

    Be creative and enjoy.


  2. try a pasta salad with veggies & some kind of chopped meat (ham, chicken, turkey) - filling & delicious! if you can't refrigerate it, just put an ice pack in your lunch box.

  3. Spinach salad, romaine lettuce, tomatoes, low fat salad dressing, blue berries, sweet onions, cucumbers, green or red peppers. Remember green's your friend. You can even put chicken or tuna romaine wraps or put on your salad.

    Iceberg lettuce has no nutritional value and only has water.

    Carrots, apples, bananas, water or caffeine-free teas, granola bites, yogurt, fat free pudding if you have a sweeter tooth.


  4. Try Avocado shrimp salad, or basically any kind of salad with shrimp or chicken.

    Grilled Chicken Caesar salad is good too or some yummy potato salad.

    Fruit Salad

    INGREDIENTS

    2 cups cubed cantaloupe

    2 large red apples, chopped

    1 cup red or green grapes

    1 medium firm banana, sliced

    1/2 cup lemon yogurt

    1 tablespoon orange juice concentrate



    DIRECTIONS

    In a serving bowl, combine the fruit. Combine the yogurt and orange juice concentrate; drizzle over fruit.

    Lunch Muffins

    INGREDIENTS

    6 slices bacon

    2 cups all-purpose flour

    1 1/2 tablespoons white sugar

    2 teaspoons baking powder

    1/4 teaspoon salt

    1 1/2 teaspoons garlic powder

    4 teaspoons dried chives

    1/3 cup grated Parmesan cheese

    1 cup shredded sharp Cheddar cheese

    1 egg, beaten

    1/2 cup milk

    1/2 cup vegetable oil

    1/2 cup condensed cream of mushroom soup

      

    DIRECTIONS

    Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Meanwhile, preheat oven to 400 degrees F (200 degrees C) and lightly grease 12 muffin cups or use paper liners.

    In a large bowl, combine flour, sugar, baking powder, salt, garlic powder, chives, Parmesan cheese, cheddar cheese and crumbled bacon.

    In a separate bowl, combine egg, milk, cream of mushroom soup and vegetable oil. Stir this mixture into the flour mixture just until moistened. Spoon batter into the prepared muffin pans.

    Bake in preheated oven for 20 minutes or until a toothpick inserted into a muffin comes out clean.

    Peanut Butter Banana Muffins

    INGREDIENTS

    1 cup all-purpose flour

    3/4 cup quick cooking oats

    1/2 cup packed brown sugar

    1 tablespoon baking powder

    1 cup milk

    1/2 cup peanut butter

    1  mashed ripe banana

    1 egg, beaten

    2 tablespoons vegetable oil

    2 teaspoon vanilla extract

      

    1/4 cup all-purpose flour

    2 tablespoons butter, melted

    3 tablespoons packed brown sugar



    DIRECTIONS

    Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.

    Combine 1 cup flour, oats, 1/3 cup brown sugar, and baking powder. Whisk together milk, peanut butter, banana, egg, oil, and vanilla. Add banana mixture to dry ingredients, mixing just until moistened. Fill prepared muffin cups 3/4 full.

    In a small bowl, stir together 1/4 cup flour, melted butter and 2 tablespoons brown sugar. Sprinkle topping evenly over muffins.

    Bake in preheated oven for 18 minutes, until golden brown.

    Brunch Burritos

    INGREDIENTS

    butter flavored cooking spray

    6 cloves garlic, crushed

    1 (8 ounce) package mushrooms

    1 teaspoon garlic powder

    6 eggs, beaten

    4 (10 inch) flour tortillas

    2 cups shredded Monterey Jack cheese

    16 cherry tomatoes

    1 (5 ounce) package alfalfa sprouts



    DIRECTIONS

    Liberally spray a medium saucepan with cooking spray. Repeat spraying while cooking as needed. Over medium heat, cook the garlic approximately 3 minutes. Stir in the mushrooms, and season with garlic salt. Cook until mushrooms are tender, about 3 minutes, and set aside.

    In the same saucepan, scramble eggs. Stir in the mushrooms, and continue to scramble until eggs are firm.

    Transfer 1/4 of the egg mixture into each tortilla. Top each with 1/2 cup cheese, 4 cherry tomatoes and 1/4 of the sprouts. Roll tortillas.


  6. When I want to splurge but also stay healthy, I will grill a steak the night before (flank steak is my favorite, but london broil will work nicely) and slice it up, put it in a ziplock in the fridge and eat it over a salad the next day.  

    I also find that eating some slices of good aged cheddar cheese with some apples fills me up all afternoon.

    -chili

    -macaroni and cheese

    -boiling water with two hot dogs - Ziploc a couple of buns and send along some travel packets of ketchup & mustard

    my daughter also likes it when I send her a selection of crackers, several pickle slices, and cut up cheese and meats (ham, turkey, balogna, salami) for a do-it-yourself Lunchable.  I have mini-cookie cutters, so I can make the meat and cheese into fun shapes that are the perfect size to fit on the crackers.

When the weather is cold, it's nice to have baked potatoes.  Just throw some broiled veggies- onion, garlic, broccoli, etc in a bag to put on top.  Maybe a little sour cream, butter, green onion.  My mom used to bake them while we were getting ready, wrapped in aluminum foil.  Then we would put them in our pocket on the cold walk to keep our hands warm.
