Question:

Soupy Tex-Mex Pinto Beans?

Usually when you go to a Mexican restaurant, you get refried beans. (yawn) But occasionally they give you some soupy beans in a small cup with lots of juice/broth, served w/ a spoon, and you eat it like a soup. I love that kind! Anyone have a T&T recipe?

(I can google as well as you, but if you have a tried & true recipe you've actually made, I'd really appreciate it before I try an unknown one off the 'net) TY!

    Barracho Beans...Make them all the time here in San Antonio..

    Pinto beans

    pick out any rocks and bad beans

    rinse and cover with cold water, bring to a boil and cover and turn off burner.

    let cool

    then add

    onions qrted

    garlic

    salt and pepper

    1 can of beer

    cumin and chili powder to taste

    salt pork diced

    cook you beans at slow boil add water to beans when needed, beans should cook in about 2 hours,

    add right before serving

    diced onions

    jalapenos diced

    cilantro

    tomatoes diced

    in Texas we call the above pico

    enjoy....


  2. I love it too! If you don't want to go through the hassle of cooking the beans your self, because it will take awhile, you can buy a couple cans of pinto beans at the store. I lived in Austin Texas for 10 years and I use to buy these beans that were cooked with bacon. The best way I had them is to take a white onion saute in a little oil, crush a clove of garlic, chop a tomato and throw it in the pot with the can beans, bring to a boil, put a lid on and lower the heat and simmer for 5 to 10 minutes. Then when you are ready to serve throw in  some cilantro. OH SO GOOD! If you like some heat you can chop at jalapeno and throw that in a the beginning!

  3. All you have to do is make a pot of beans. In it add a piece of salt pork and cook. After serve in a bowl and enjoy. I have been making it this way for years. Some times I add onions and garlic to the pot. Other days I add Pico de Gallo or just some leaves of spinach. You can also use a crock pot to make them over night and enjoy them in the morning for breakfast. Yummers....I am off to make some now.

    Remember to clean your pinto beans, add them to cold water. Never add salt when cooking them at first it will make them tough. Wait until half way done. If they take four hours to cook add your spices after two hours. Have fun learning how to make the best Tex-Mex beans you will ever have!!!

  4. I tried this recipe, and I got it from www.grouprecipes.com, and I absolutely love it!

        * 2 cans pinto beans (15 oz each)

        * 1 can yellow hominy (15 oz)

        * 1 tomato, diced small

        * 1/4 cup onion diced small

        * 2 cloves garlic, minced

        * 1 fresh serrano pepper minced, 1/2 cup

        * 2 tablespoons chopped fresh cilantro

        * 1 teaspoon chili powder

        * 1/2 teaspoon cumin

        * !/2 cup water

    Directions

       1. Rinse and drain hominy and beans.

       2. In a large sauce pan combine all ingredients.

       3. Heat throughly... about 30 minutes.
