Mock sour cream.  Put equal parts skim milk and non fat cottage cheese in a food processor and blend until smooth.  And it's a LOT healthier than sour cream.

Just as a topping or in a recipe?  If it is in a cake or something you might be able to use apple sauce.  

If it's a main ingredient see if there is fake non-dairy sour cream.

I've heard plain yogurt, but I don't think there is any substitute for the real thing.

You can use tofutti sour cream! Or maybe even Veganiese or guacamole.

Hummus is good, so is pureed tofu with a little garlic, sesame oil and soy sauce.  Or, try tofu pureed with a little lemon juice.

Avocado is good, too.  Its not white, but its very rich and creamy (it has the texture of butter).
