South Africa: What affordable, quick, nutritious and easy recipes do you have to share with the rest of us?

In today's economy and for many contibutors, the lack of time, it's hard to make good and healthy meals. Besides that, I have run out of ideas of what to make for dinner. What do you make for dinner using the criteria I gave in the question?

  1. Vetkoek hamburgers !

    1kg cake flour

    10mg dry yeast

    1ts salt

    650 ml luke warm water

    Patties you make yourself or take some boerewors out of the skin and make patties with the mince !

    Fresh lettuce unions and tomato and you're there !

    If your budget allows it Mushrooms ,cheese and ms.Balls chutney !


  2. Vegetable rice, or whatever one wants to call it. The germans call it "bunter Reis" = colourful rice.

    Works best when you have left over rice and meat from a previous meal.

    I fry diced carrots (take longest to cook) and while carrots are frying,

    chop an onion and add to pan;

    then do the same with any other veg you have at hand.  Zucchini, red or green pepper, peas, mealies, garlic, leeks etc.  

    When the veg is almost done, (al dente, if you prefer) add the meat if you have any,

    add rice and give it a good seasoning with braai spice (or fish spice is also nice).  

    Add a few chopped tomatoes if you have, and sprinkle on some parsley.

    Mix through well before serving.

    You can also use raw chicken or minced meat, and fry it at the same time as the carrots.  Vary it according to what veg you have, and what seasoning you want. Can also make it curry flavour and add a touch of borrie.  

    This is excellent for using left overs from chicken roast. Use all the roast veg and meat left over. A little meat goes a long way.

  3. 1. Boerewors, mash potatoes and peas (not too expensive and quick to make)

    2. Cowboy Food: mince, curry, turmeric, thyme, can of tomato paste, 2 x cans of different beans and some rice = easy Chillie con carne.

    3. Buy a packet of Woolworths Fresh soup mix (R 19,00) boil for 40 minutes with some nice fresh rolls.

    4. Ag and then of course all your typical pasta dishes, but my family is sick and tired of pasta, because of my husband that is for ever carbo loading before a race.

  4. If you have cold meat, a sandwich with lettuce, tomato, cheese and mustard , or with cold chicken, cut the chicken small, mix with mayonnaise and make sandwich with lettuce and the chicken

    If you have cold fish, cut small, mix with white sauce, cover with mashed potato and bakes till for about 20minutes till brown and warm
