  1. Come to Spain and try our Tapas!!! It's the best way to know about them

  2. Basically, Tapas are just small servings of anything that you can order anyway.

Here´s a list of really upscale fusion type tapas:

This site includes some pretty common types:

This one has a list of different sites:

Borders has a little book of tapas recipes, again, sort of modern stuff.  For the most part, anyplace you go in Spain, you´ll find bars selling tapas, which are nothing more nor less than typical Spanish foods, in small portions, so any recipe from a Spanish cookbook, served up on bread and butter plates, would work.

Typical ones that come to mind really quickly

    Paella

    Hígado en jerez

    chipirones/calamares en su tinta

    pulpo a la gallega

    pulpo romano

    caracoles (snails)

    Gambas al ajillo (shrimp scampi)

olives usually mixed sizes and colors

    espinacas con garbanzos

    tortilla

    croquetas

Just to give you a quick idea.

  3. Look for chorizo al vino tinto tapa's... OHHHH...tasty... the famous patatas bravas...and the best bar of tapas I found it on Donosti, on the main street in the old part of the city, near the San sebastian's cathedral... and don't forget u most ask for a good rioja one to make the perfect match
