Juan Sebastián Elcano, Balboa, Cortes and Pedro de Alverado, Cabeza de Vaca, de Soto. That's more than 3.

Some would include Columbus. OK he was from modern day Italy but he wrote in Spanish and his expeditions were Spanish funded and he left from Spain, and so on.

Actually, nobody is really sure WHERE Columbus was from.
