  1. enchiladas. just have warm tortillas rolled with any meat or cheese or potato, fry and add sauce there's tons of recipes out there.

  2. Platano con Salami

    super super easy

  3. First of all, Spanish and Latin American  foods are quite different.  Spanish food is from Spain, and while there are similarities, they are quite different.

As for a recipes, try this:

    Salsa Verde:

    1 pd. tomatillos

maybe a quarter of an oinion

    a few jalepenos

    couple cloves of garlic

    salt to taste

    big handful of fresh cilantro

In a pot over medium heat, cover tomatillos with water and bring to a gentle boil, cook until soft (about 10 min).  Drain, and put in a blender with onion, chiles, garlic.  Blend until smooth but still a little chunky.

Salsa verde is a very common salsa.

    Tropical Salsa:

    2 mangoes

    1 orange

    1/2 cucumber

    Juice of 1 lime

    1 - 2  habenero chiles

    salt to taste

cut all mangoes, orange, and cucumber into chunks.  Cut the seeds out of the habenero, and cut into small pieces.  Toss it all with the lime juice and salt to taste.

This second one is spicy.  Especially if you use 2 habeneros, so be careful.  I have never had a problem cutting chiles, but some peoples skin is sensitive to the oils in them.  Also, don't get it in your eyes.

  4. I have an easy solution for you.  Call this dish, "Carne Asada."  It is mexican.

Cook up some steak in olive oil.  Thin cut prefereably.  Load the meat with whatever you feel like.  I would recommend a little bit of chilipowder, garlic salt and pepper.  Then cook up some beans (black or pinto) as well as a package of spanish rice.  Cut up some avacados and make up a little salad.  Bring in tortillas or anything else.  Put everything sparingly on a plate and you have a classic mexican dish.

  5. I made these as a kid

    Easy Mexican Bunuelos

    Flower tortillas (cut into quarters)

    Oil

    Sugar

    Cinnamon

** combine sugar and cinnamon in a bowl & set aside

Step 1: fry tortillas in oil until golden

Step 2: place on paper towels (to remove oil)

Step 3: while still warm - coat tortilla chips in sugar/cinnamon mixture

Once they’ve cooled you can put then in a paper bag to transport

    ENJOY!

  6. Argentine beef steak

  7. Guacamole

    Refried beans

Both can be eaten with tortilla chips.
