Paella - it's got just about everything in it and it's Mas Delicioso.  Or Arroz con Pollo - yummm.

Gazpacho - tried it but I don't like cold soup.

salad - something with seafood,  camarones (shrimp) is good. Bacalao (butter fish) salad is YUMMM!  water cress, tomatoes, onions, bacalao, and I think lettuce (leaf, not head) and oil, vinegar and shoyu (soy sauce) and salt and pepper ... *getting hungry!*

Sangria is a wine - I have tried the "soda" version, it's ok, I usually prefer water or iced tea, so I can't help with the drinks ... well, maybe Guyaba (guava) juice, that tastes good, but I love to pick and eat fresh guava's off the tree.

flan - custard/pudding with caramel topping.

What are you looking for exactly?  Recipes?  Try FoodTV - they got good ones.  I am lousy at giving recipes - I cook by look and by taste, I don't measure anything ... blame my abuelita, lol, her mama taught her to cook like that and she taught me.
