  2. My favorite sites are http://vegcooking.com and http://recipezaar.com

Here are a few of my favorite recipes:

These are really easy banana muffins:

I used to pile the cheese and sour cream on my baked potatoes, but these are so good I don't miss the dairy:

I've also done a modified version of these:

    http://www.recipezaar.com/162408

I found both recipes, and bought most of the ingredients, but when I started cooking, I didn't refer to the recipes.  So I ended up with a cucumber tomato salad with Balsamic vinegar and spices.  It's really good and easy.

  4. For a light lunch or an afternoon (or late night) snack, try "Bumps on a Log."  Mix 2-3 tablespoons peanut butter with a teaspoon or two of margarine and the tiniest drop of hot sauce (like Tabasco.)  Mix until smooth.  Cut a celery stalk into 4" sections, but don't split it up the middle.  Spread the pb mixture into the groove of the stalk sections.  Dot with raisins.  It's a great simple snack with a little extra protein.
