Who were these people? There's nothing on Wikipedia. Were they part of pper, middle or lower class?

Anyone who was not a Spartan citizen, including Spartans who lost their citizenship because their parents could not afford to put them through the expensive training, which is why the Spartan population declined and died.

The worse off where the helots, slaves/peasants/prey.

All civilizations depend of farmers. And all of them put those same people down, as part of their denial of dependence. Which could explain why the attraction of synthetic food is so popular.
