Can someone tell a few not so popular specialisations in science and what they study

I suggest you read a bit about any that interest you.

Eventually all fields become specialised - eg you wouldnt be a physicist you'd be a particle physicist specialising in high energy detection, or you wouldnt be a biologist but a molecular biologist specialising in protein folding... or something.
