Specialty Farming, any ideas?

Im thinking of going into farming, but i want a small one (like large backyard size) with a niche market. Can you think of anything you really need for work or like to eat, but no one sells?

  1. What about organic berry varieties? Cranberries, blueberries, boysenberries etc.
