  1. I use Italian seasoning, garlic powder, onion powder, salt and pepper.  And, a splash of olive oil.

For my spaghetti meat sauce, I brown 1 to 1 1/2# lean ground beef over medium heat.  I start the beef and then chop an onion and some green pepper and add them to the pan as soon as they're chopped.and stir the meat and crumble it with a spatula.  When the beef is brown and the onions and peppers are softened, I add a 6 oz. can of tomato paste, at least 24 oz. of tomato sauce, 1/2 tsp. salt, some fresh ground black pepper, 1/4 tsp. paprika, 1/2 tsp. garlic powder (or I've added a couple cloves of chopped garlic with the peppers and onions), about 1/2 Tbs. sugar, a few dashes of Tabasco sauce, and then herbs.  If fresh herbs, use 3 times as much.  So I guess I use about 2 Tbs. parsley flakes, 2 tsp. oregano, 2 tsp. basil leaves and 1 bay leaf.  Stir it all together.  Cover pan and simmer for at least 1 hour, stirring occasionally and adding more tomato sauce if needed.  Remove bay leaf before serving or at least don't eat it...it would always end up on my dad's plate even if my mother and I really tried to find it to remove.  It got to where we intentionally put it on the edge of his plate!

  3. Brown some onions & garlic,  add meat, brown, add tomato sauce, garlic powder, onion powder,oregano, basil,to taste.  Let simmer, ( the longer the better)  add noodles or segetti. Parmo cheese. your good to go.

    I also cook in a pot some pork neck bones in a little extra virgin olive oil, garlic powder, onion powder, pepper and salt. Then I take some of the juices and a couple of the neck bones and put it in the sauce for about an hour or so.

    TIP :  When using any kind of dried herbs put the herbs in the palm of your hand and rub your hands together releasing the herbs right into the pot. This will release the flavours. Don't believe me? Smell how good your hands smell.
