    List Of Ingredients For Beef Biryani

    450g of cubed lean beef braising steak

    150g of basmati rice

    3 tablespoons of curry paste

    400g of chopped tomatoes (fresh or canned)

    410g can of chick peas

    1 cubed large potato

    2 sliced carrots

    175g chopped cauliflower

    2 chopped onions

    1 crushed clove of garlic

    1 teaspoon of oil

    150ml of stock

    Half teaspoon of ground turmeric

    How To Make Beef Biryani

    Step By Step Instructions

    Heat the cooking oil in a large saucepan and cook the onions and the crushed garlic until they are soft.

    Add the beef until it browns.

    Stir in the curry paste, tomatoes, seasoning and the stock.

    Cover the saucepan and cook for one hour.

    Add the vegetables along with the chick peas and cover again. Cook for 30 minutes.

    Whilst this is gently cooking prepare and cook the rice with the turmeric.

    Drain the water from the rice and put half of the rice into an ovenproof casserole dish and cover with the beef and vegetable curry. Cover this with a layer of rice and then pour on the left over curry mixture.

    Cover the dish with a tight fitting lid. Place in a preheated oven at Gas Mark 3 or 170C for about 40 minutes so that the meat is lovely and tender.

    Serve with your favourite breads like Nan or chapatti, popadoms and chutneys like mango.

  6. Vietnamese Beef Stew with Star Anise and Basil

    Bo Kho

    This fairly simple recipe is a great example of Vietnamese comfort food.  Often served steaming-hot at breakfast along with crusty, freshly baked baguette, Bo Kho also makes a great dinner for a cold winter’s night when served over noodles or steamed jasmine rice.  The rich, gravy-like broth is satisfying and the aromatic star anise, basil, cilantro and lemongrass give it a faintly exotic aroma and that characteristic Vietnamese fresh quality.  Sometimes, potatoes are added along with the carrots and in the south, whole eggs are often simmered in the stew during the last few minutes of cooking.  This is a one-pot dish that is traditionally cooked in terra cotta pots but any heavy skillet, large pot or Dutch oven that you have will work fine.

    Serves 6

    2 to 2 1/2 lbs boneless beef chuck or beef stew meat cut in 1 1/2 inch cubes

    1 TBS ground annatto seeds (achiote) or mild paprika

    2 tsp Chinese five spice powder OR 1 tsp curry powder and ½ tsp ground cinnamon

    ½ tsp salt

    ½ tsp freshly ground white or black pepper

    3-4 whole star anise, lightly toasted

    2 TBS minced fresh ginger

    2 TBS chopped shallots or scallions

    3-4 cloves minced garlic

    1 or 2 red serrano or jalapeno chiles, chopped or 1-2 tsp hot chile flakes (more or less to taste)

    2 TBS fish sauce (Vietnamese is preferred)

    2 TBS soy sauce

    1 TBS raw or brown sugar

    6-8, 3-inch pieces of lemongrass, lightly crushed (if you cannot get lemongrass, add 2 TBS lime juice at the end of the cooking)

    ½ cup seeded and finely diced tomatoes or 1/3 cup tomato puree

    3 1/2 cups beef or chicken broth or water

    ½ lb carrots, peeled and cut into ½-inch thick rounds

    1/2 cup very thinly sliced onions

    ½ cup Asian basil leaves, coarsely chopped

    ¼ cup whole cilantro leaves

    3 TBS vegetable oil

    1. Mix the annatto, five spice powder, sugar, salt and pepper together and toss with the beef cubes

    2. Heat the oil to very hot in a heavy skillet or pot and brown the meat well.  Add the ginger, garlic and shallots and continue cooking for a minute or two.  Add the tomato and fry for two more minutes while stirring.

    3. Pour in the broth; add the fish and soy sauces, lemongrass, chiles and star anise.  Bring to a boil and reduce to a high simmer.  Cook for 40-60 minutes, stirring occasionally, until the meat is fork-tender

    4. Add the carrot slices and cook for 15 more minutes or until the carrot is tender.  The liquid should have a light, gravy-like consistency.  Taste for salt and add more fish or soy sauce if needed

    5. Remove the lemongrass (if you want), stir in the basil and serve topped with onion slices and cilantro

    Ingredients:

        1 tablespoon sesame oil

        1 to 2 teaspoons finely minced fresh ginger

        1/2 teaspoon ground granulated sugar

        3 tablespoons soy sauce

        2 teaspoons water

        2 pounds round steak, sliced

        1 tablespoon vegetable oil

        2 garlic cloves, crushed

        5 red chili peppers

        1 onion, finely chopped

        1 cup sliced green onion

        1 red bell pepper, seeded and sliced

    Directions:

           1. In a bowl combine sesame oil, ginger, sugar, soy sauce, water, and thinly sliced round steak; mix well and marinate about 20 minutes.

           2. In a skillet over medium heat, add oil, crushed garlic cloves, red chili peppers, chopped onion, sliced green onions, and sliced red bell pepper; cook for about 2 to 3 minutes.

           3. Add the meat mixture, stirring, and cook for about 3 to 5 minutes, or until done.

        Makes 4 servings.
