Question:

Sponge mix = muffins or cupcakes?

I've got a shops own brand victoria sponge cake mix (which doesn't rise very well...) and some left over bananas and blueberries.

If I add the fruit to the mixture with some extra baking powder (I don't have bicarb of soda) and use either muffin cases or capcake cases, what will happen?

  1. You should make sure the fruit is chopped up finely so that it doesn't weigh the mixture down and use the cupcake cases. Maybe add a small amount of baking powder and a small amount of self raising flour, this will make sure the mixture doesn't become stodgy. See what happens!

  3. I do like a bit of sponge me. It doesn't have to be super light and fluffy, it will still taste nice. Take care to VERY gently mix the said concoction you have mentioned, as this will keep enough air in it to retain a certain lightness, it is an art form in itself.

    A Lady whom I call Mrs Kipling, because she certainly makes exceedingly GOOD cakes (groan) makes a lovely array of cakes.

    My personal favorite is her Fruit Cake flavored with rum, she isn't talking to me at the moment, as I stole behind the Cake Fete's Tent where her Prize Winning Cake was proudly sat on a silver Platter and began to munch into the Delish Object. Naturally as the ceremony opened and the Curtain raised up to dazzle the crowd, the vision of me delving into the splendid Cake with my trousers around my ankles so as to accommodate my burgeoning waistline caused a ripple of resentment through the cake enthusiasts and Mrs Kipling alike.

    Ah well. Can't please them all.
