Question:

St. Louis style pizza?

I was in St. Louis a couple years ago and had some St. Louis style pizza- I forget the name of the place but I know it is a local chain in St. Louis. It had a special cheese on it that was kick booty. What was the name of the type of cheese? Is there a place that I can get it online?

BTW- TX has better ribs :-)

    You can order the Provel cheese, which by the way, is not goat cheese...Provel is produced with cheddar, Swiss, and provolone (http://en.wikipedia.org/wiki/Provel).  The website is a little on the pricey side, but if you gotta have it, there you go, delivered right to your door!

    As for the ribs, all that you are used to...and what you like as far as sauce...haven't been to TX (yet), but I much prefer either the KC or Memphis sauces better.

    Oh, and by the way, St.Louis style ribs is how the ribs are trimmed, not how they are prepared (I used to work in a meat packing plant)


  2. imo's doesn't use goat cheese its provel i know b/c i worked there for over ten years and u can by it at the grocery store deli

  3. Imo's and it is Provel (not goat cheese ?).  It is widely available in St. Louis - at grocery stores etc.  but is not common outside of the St. Louis area.  Vivianos or DiGregorio (both markets on the Hill) have it available via their websites.

  5. Imo's pizza and they put that cheese in their salads too.  They have a great house dressing that you can now buy in some supermarkets.  I dip the pizza in it too.  yummy

  6. Probably Imo's is the chain& the cheese was provel. I am a native St Louisan who moved to Florida, and get my provel cheese shipped to me on line from Jhon Vivianno & Sons in St. Louis. I have a pizza parlor down here that does a thin crust pizza for me that is very close to what I got back in St. Louis.  I am happy with the combination and enjoy it as much as I were sitting in Imo's  back in my home town. I hope I have answered all you questions.

  7. It's Imo's pizza, they use goat cheese, u can buy it at the grocery around here, but elsewhere i dont know.

    BTW-St. Louis stlye Ribs are just different, its an acquired taste

Yes, Imo's (EEE-moes as opposed to EYE-moes) and Yes to provel.  But it's not goat cheese.  I don't know where to get provel outside of St Louis...it's like pork steaks, toasted ravioli and Vess soda.  When a St. Louisan moves, he has to get these things set or he'll never be happy.  I like the ropy provel for salad...nothing better with a nice sweet Italian dressing like Zia's.  Here you can provel pretty much anywhere.

    And in spite of what they think in Brooklyn, we do not put Kraft American Cheese slices on our pizza, unless that's what you really want.
