Star Wars: How was balanced brought back to the force if The Sith died???

that would mean there was no black or white area only - White

which means balanced wasnt brought

This is another of those "Only George knows ..." things.  Without the George Lucas dictionary to look it up in we don't even know what he means by "balance".  I've done a lot of digging into this subject because as you say ... how can you bring balance to anything by destroying only one side of the scale.  I've searched the Star Wars databanks and even broke down and bought a Hyperspace membership thinking it would make my searching easier ... it didn't.  h**l, I can't even find anything about the Prophecy of the "Chosen One" ... at least what the text was of the "original" prophecy that was given thousands of years before.  The earliest version I have found of it didn't even have the word "balance" in it.  A newer version of it given by Yoda that was given to him by his master, another thing we don't know, and in his version the word "balance" wasn't in it either.

    So without anything "official" to be found about this we have only opinions and guesses to go on ... here's my "theory":

    I believe that as the "Chosen One" Anakin was DESTINE to fall to the dark side.  Hang on there ... I'm not too crazy ... lol ... I think to bring "balance" BOTH the Jedi Order ( I should add here that the Jedi Order that I mean is the "old" Jedi Order that was taught by Yoda and others like him)  AND the Sith Order had to be destroyed.  The only way the Jedi Order could be destroyed was if Anakin joined Palpatine.  After Order 66 they would have the combined power to pick off any surviving Jedi that were missed by Order 66.  We know from the books that there were a few Jedi that escaped and went into hiding and that Luke runs into them here and there in the books but for this the thing that matters was that at the end there were only two Sith Lords standing and two Jedi standing ... of course they end up fighting and of course both fights, for the most part, ended in a draw.   Jump ahead 19 years and one of those surviving Jedi falls to the blade of Vader.  Then, Yoda dies ... when that happened the "old" Jedi Order was destroyed.  The whole battle at the end of ep VI is to finally find out if the "new" Jedi Order that, at the time, Luke was the only member of could finally defeat the Sith.  As we see from the results of the fight, Luke laying on the floor slowly being fried by Palpatine, he wasn't ... or was he.  If Palpatine had a flaw it was his own belief that he couldn't be defeated and especially not by a "upstart" Jedi like Luke.  He forgot that there was another person who was destine to destroy the Sith ... Anakin Skywalker.  With Luke laying there dying he called out to his father ... not to Vader and not to Anakin but to his father ... for help.  When that happened the little piece of Anakin that has laid buried deep inside the evil that Darth Vader was latched onto a power that can never be overwhelmed or defeated ... the power of the love that a father has for his son.  In that moment the blindingly brilliant presence of Anakin Skywalker came flooding back into the light side of the Force.  When Anakin threw Palpatine down the reactor shaft he not only destroyed the Sith Lord Darth Sidious ... he also destroyed the Sith Lord Darth Vader thereby fulfilling his destiny of destroying the Sith.  When Anakin Skywalker died in the arms of his son in a docking bay on board Death Star II both the Sith AND the old Jedi Order had been destroyed thereby bringing the Force back into balance.  It was Luke's destiny to aid his father in destroying the Sith and to start a New Jedi Order that wouldn't be based on the bias teachings of the old Jedi Order.

    Well that's my theory and I'm sticking to it ... lol ... I do think though that it's a nice little theory that pretty much covers all the bases ... if you find some holes in it let me know so I can "recalculate" things ... lol ...
