I am speaking of stick welding in production plants only, not in building construction.

"Stick" welding is not generally used in production welding.  Its generally too slow and messy.  Usually, MIG, Submerged arc, or occasionally TIG welding.

Stick welding is used for field welding (including but not limited to construction), pipe fitting, and maintenance and repair work.

I would think it is used to join parts in an assembly, not really to produce parts.  These are usually steel parts and the list is endless.

I guess if I had to answer you questions I would say metal assemblies, dominantly steel but other metals are certainly possile.
