Sticks and Hay recipe from the UK?

I might have the name wrong but they used to have this at Mimi's Cafe a few years back.

It contained the following -

A long cooked pasta (linguine or angel hair)

Mushroom cream sauce

Satueed mushrooms

Bacon bits(?) - not 100% sure about this one

Hot or cajun sausage

Chopped chicken

Green peas

Anyway, I would like the official recipe. Thanks!

  1. I love Mimi's Cafe, they have pretty good Fish & Chips too.

    This recipe sounds more Cajun than from the UK.  This is my recipe, it sounds pretty close but feel free to tweak it.  You can always fry up some bacon and crumble it on top.  Also,

    you can use linguine or fettuccine pasta.

    Ingredients

    1 cup cooked chicken pieces, small pieces

    1-2 spicy sausages (chorizo, linguisa...), sliced

    12 ounces pasta (I like bowties or penne)

    2 tablespoons butter

    2 cups sliced mushrooms (crimini mushrooms work well)

    1 cup green peas

    1/4 cup onion, finely sliced

    2-3 cloves garlic, minced

    2 tablespoons flour

    2 cups milk

    3-4 fresh basil leaves, hand torn

    salt & pepper, to taste

    1/2 cup shredded parmesan cheese

    1 tbsp freshly chopped parsley

    crushed red chili pepper, to taste

    1 tbsp olive oil

    METHOD:

    Cook the pasta according to pkg directions; drain.  Toss very lightly with a little oil and set aside.

    In a large skillet, heat the oil and when hot add the sausages.

    Cook until brown & crisp.  Remove, drain and set aside until needed.

    Drain any extra oil out of the skillet.  Add the butter over med-hi and saute mushrooms for 2 minutes. Add onions, peas and garlic; cook for 2-3 minutes. Add flour and cook and stir for 1-2 minutes.  Now add the milk, crushed red pepper, salt and pepper.  Cook and stir until sauce is thickened and smooth.

    Remove from heat; add Parmesan cheese and basil. Toss with drained pasta.  Add the chicken and sausages and let cook through.  Sprinkle with parsley & serve.
