Question:

Sticky Rice, I was told it was japaneese rice? But...?

when I go to the internet for info on how to make sticky rice, they say add a cup of sticky rice, not japaneese rice? I am confused. I have several Asian markets where I live and I wnat to purchase and make my own sticky rice.

  1. Do you  have your  heart set on   a Japanese Style sticky rice?  The Thais  do a really good one , if memory serves (I haven't made it for a while) you soak the rice  for a couple of hours and then cook it

  2. Its actually called glutinous rice (the "glut" is what makes it sticky). Its used mainly for desserts. Also sushi/Japanese rice is stickier than American white rice. There is nothing to 'make' as the naturally occuring starches (which Americans rinse off) is what makes the sticky  :)

    The Thai's & Lao's consume them on a daily basis as well.

    The rice is a short thick grain, to make sticky rice you'll have to soak it in water for 30-45 minutes, then steam it in a special pot that looks like this...

    We try to have sticky rice at least once a week. Sometimes I'll make rice dessert with mango or corn with coconut milk.

There are different kinds of sticky rice.  If you are thinking of the kind that you roll into balls and eat with your fingers - that is Thai sticky rice and I make this daily.  Bags of it will either be labeled glutinous rice, or sweet rice.  If you have a predominantly Thai or southeast Asian market around you, you might be able to ask them for "Kow Nee-ew" and they should know what you mean.  To prepare it, you need to soak the rice for 4-8 hours and it is cooked by steaming the soaked rice for about 30 minutes.  Here is a link that illustrates the process - http://importfood.com/stickyrice.html .  If this is the kind of rice you are looking for, the Asian market should also have the steaming equipment for pretty cheap.

  7. Japanese rice is short grain rice.  This is used to make sticky rice.  Add some rice vinegar when the rice is done to make it sticky.  If you don't want to buy rice vinegar you can use regular vinegar with some salt and sugar in it.

    This is how the rice is made sticky for sushi.

  8. We get the Calrose Botan  brand rice.  It is also called sushi rice.

  9. Japan does not export any of their rice so your best bet is to find short grain white rice. You can probably find it in the "ethnic" aisle at the grocery store. Rinse the rice before you cook it until the water is clear and then add the previously mentioned vinegar. It won't clump as well though if you refrigerate it.  Let it cool down on the counter instead.
