Strange unidentified plant?

We were recently traveling and somewhere between Florida and Texas I found this growing in a grassy area of a truck stop. I'm sure it's a weed but the bloom looks exactly like fiber optic lights. I hope it can be seen in the picture. Anyone know what this is?
