  1. Ingredients

    2 1/2 C flour

    1/2 tsp. baking soda

    3/4 tsp. salt

    1/2 C butter or margarine

    1/2 C shortening

    1 C PIONEER SUGAR

    1 tsp. vanilla

    1 egg

    2 T milk

    Directions

    All ingredients should be at room temperature. Preheat oven to 375 degrees F. Lightly spray a cookie sheet with cooking spray; set aside. In a bowl sift together flour, baking soda and salt; set aside. In a large bowl cream together butter, shortening, PIONEER SUGAR and vanilla. Add egg and mix until fluffy. Stir in dry ingredients until mixture is smooth. Blend in milk. Drop by teaspoonfull onto greased cookie sheet. Flatten with bottom of glass which has been dipped in PIONEER SUGAR. Bake for 10-12 minutes. Cool and enjoy.

Into the bowl sift together the flour, the baking soda, and the salt and stir the mixture until it forms a dough. Chill the dough, covered, for at least 2 hours or overnight.

    Preheat the oven to 375°F. Roll rounded tablespoons of the dough into balls, roll the balls in the additional sugar, coating them completely, and arrange them 3 inches apart on lightly greased baking sheets. Flatten the balls with the bottom of a glass dipped in the sugar (the edges will crack slightly) and bake the cookies in batches in the middle of the oven for 8 to 12 minutes, or until they are pale golden. Transfer the cookies to racks and let them cool. The cookies keep in an airtight container for 1 week.

  4. baking powder helps cakes rise !  I usually use twice as much sugar as I do flour. then just a dab or so of vanilla flavoring... and for something different...add 2-3 tsp of coffee.

  5. Easy Sugar Cookies

    2 3/4 cups flour

    1 tsp baking soda

    1 cup butter, softened

    1 1/2 cups white sugar

    1 egg

    Preheat oven to 375 degrees F

    Measure out flour and set aside.

    Cream together the butter and sugar until smooth. Beat egg into butter mixture. Gradually blend in flour. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.

    Bake 8 to 10 minutes or until golden. Let stand on cookie sheet 2 or 3 minutes before removing to cool on wire racks

    Sugar cookies:

    1 cup of butter

    2 cups of sugar

    Cream together and add

    2 eggs beaten with

    2 T milk and

    1 teaspoon vanilla (I like a bit more)

    Mix with the butter mix

    3 cups flour mixed with

    1/2 tsp salt....and as much as

    1/2 cup more flour until it's stiff enough to roll out

    Make flat patties, wrap and refrigerate for an hour or longer....

    Dust board with flour and powdered sugar mixed 1/2 and 1/2 and roll and cut...

    Bake 375 for 8 to 10 minutes....I use parchment on the cookie sheets....if you don't have parchment....lightly grease the sheets.

    The absence of baking powder keeps them from rising and keeps the cookies true to the shape of the cutter.....and makes them crisp
