  1. I don't think that soy is a substitute for wheat (unless it's soy flour).  You're comparing a protein source with a grain.  The better comparison might be rice to wheat


  2. I can think of none.  Soil and climate is the primary cause for choice.

  3. Wheat doesn't grow in all climates and was unknown to some cultures so places China, Japan Thailand and Korea learned to use Soy which adapted there culture to its use.

  4. you cant mix soy and wheat they are two different plants
