The only one I know is the famous Les 2 Garçons right in the heart of Cour Mirabeau. I had the most incredible Steak Tartare there, it was my first one and a pure revelation.

Les Deux Garçons is fine for a coffee or apéritif. The décor is amazingly beautiful. But the food is not always good. The chef has changed recently.

There are many restaurants in Aix, but not many are good (if you like eating, Marseille is probably best). But one of my favorite restaurants in Aix is Le Formal. Very good food, nice place, not too expensive.
