Question:

Suggestions on making stuffed chicken with colby jack cheese and yellow, red, & green bell peppers?

I wouild prefer to bake it. I also have bread crumbs, but would like to keep it somewhat healthy. Thanks for any suggestions!

  1. Pound the chicken breast flat. Lay your fillings down. Fold in the two shorter edges, then roll the chicken up. Insert a toothpick to make it stick.

    Lightly coat with oil and sear in a skillet until the outside is just browned. Use med-high heat for this. Then transfer to the oven to finish cooking.

    fill with diced peppers and cheese

    lightly flour chicken

    place on lighty oiled baking dish and bake for 30 min at 350

  3. Saute the peppers in olive oil, consider some diced garlic as well for additional flavor.  Let peppers cool.  Pound chicken breast to 1/4 inch.  Add peppers and cheese, roll and fold ends, seal with toothpick.  Sear chicken in saute pan over medium high heat - about 2 minutes per side, reduce temperature to low heat - pull pan off heat and add 1/4 cup white wine and 1/2 cup chicken stock.  Return pan to stove, cover and simmer, covered for 15 minutes on low heat.  Remove from heat, add 1 tablespoon butter for a richer sauce, optional.   I prefer this method over the oven as you get a nice sauce for the chicken.
