Summer Wedding Food?

My wedding is going to be at the end of June and it will be nice and hot out, we wanted to serve cold foods at the reception but are kinda lost on what to have. I dont just want to do finger sandwiches, I want the food to be interesting yet quick and easy to make. Any ideas? Thanks

Can't go wrong with party wings, pasta salad, corn dogs, meatballs, quisidias, variety of shiskabob eg. chicken, beef, shrimp & add mushrooms, onions, bell peppers to each served over a bed of rice...and lemonade & ice tea. The idea is to stay away from food items that has milk, eggs & mayonaisse.

  3. FRUIT SALAD:  Hollow out half a watermelon, and put the cut melon, berries, etc. back into the shell to serve.....

    ARTICHOKE RICE SALAD

    1 pkg. chicken flavored rice mix (like Rice-a-Roni)

    2 green onions, thinly sliced

    1/2 green pepper, chopped

    8 pimento stuffed olives, sliced

    1 (6 oz) jars marinated artichoke hearts, cut up & drained **

    1/4 tsp. curry powder

    1/3 c. mayonnaise

          Cook rice as per package.  Mix everything else into the hot rice.  Serve as a salad:  hot, cold or room temp  (DO AHEAD and great to leave out on a buffet table)

    **  Use the liquid from the artichoke hearts to mix with some Italian dressing, and marinate halved, washed fresh mushrooms.  Serve in a bowl with toothpicks

    BONELESS PORK LOIN

    2-4 lb. boned, rolled pork roast

    1 Tb. dry mustard

    1 tsp. salt

    pepper & paprika to taste

    1/2 tsp. caraway seed

         Rub roast with seasonings.   Roast on rack in shallow pan, uncovered, at 350 until thermometer registers 185 (45-50 min. per lb).  Slice thin. ... This is a great dish for a buffet table.  Serve hot or cold (DO AHEAD)

  4. Definitely Shrimp cocktail or an oyster bar. Cheese and crackers, veggies, interesting fruits, asparagus wrapped in bacon, deviled eggs, antipasto platter, smoked salmon and caviar or cream fraiche.   5. If there is something you need to keep cold set the platter or bowl inside another container filled with ice. For hot food you can buy the disposable Sterno sets at a local party supply store.

    Fruit and Veggie trays are always good.

    Swedish meatballs in gravy, mini quiches, and stuffed mushrooms  are good for hot foods. Some other ideas could be either cheese cubes or cheese balls, spinach dip, and salsa to be served with crackers.
