  1. Typically the TV will follow the signal that it is receiving.  You are only seeing 480 on the guide because a standard cable or dvd signal is only 480.

You should double check under your tv options to make sure that it is not forced to 480 instead of 720 when you do receive your HD receiver.

The receiver should also have an option for forcing it to stay in 480 or 720, or auto selecting.  If your TV only goes to 720 make sure to leave the 1080 selection off.

You will most likely want to leave it auto in case you do want to watch any of the 480 programming.  You will have both coming in from your cable box, depending on the channel.

  2. If it is 480i, that is very sad. =(

Where your money is very well spent is 1080p. (not 1080i)

    720p should be good.

    Look through your manual.

Mess around with the menu button on your control.

(If you play games I would recommend "p" better than "i", when playing on "i" you might expect a lot of "lines"  going up and down your screen because of movements by the character on your screen)

    yeah...

  3. You cannot get 720P without a 720p source and the old cable box will not provide this.  If you are in an urban area you could hookup up a set of rabbit ears and get the local HD channels for free.  If your set is a 720p display--you can still see 1080i and it will look great.
