Sushi Question: Does all spicy tuna roll contain mayonnaise?

I just started getting into sushi, and my favorite is the spicy tuna roll. However, I recently found out I am allergic to not only milk but also eggs (as in, I break out in horrible, itchy hives -- but not anaphylactic shock). I tried California Roll and had a terrible reaction, and someone said it was the mayonnaise. Should I also beware of spicy tuna? And are there other rolls I should avoid?

  1. I think most restaurants put a little mayo in their rolls even if it's not mixed with anything so just make sure that you get solid pieces of meat and ask for no mayo when you order.  Make sure to tell them you are allergic so they take you seriously.

  2. At the sushi restaurant I work at, to make spicy tuna, we take all of the tuna off the fish in "filet pieces." Then, all the meat that is left is inbetween the bones of the fish. So we scrape all the meat out and all we have now is a bunch of tiny shreds of tuna.  So we mix it with mayonnaise and shiraishi sauce(spicy).  Sounds good, huh? Think again.  This is the Spicy Tuna Roll.

    All of the "crab" we serve in rolls are fake crab.  Actually on the box, it's called "fish stick".  We take these "sticks" and chop them up and add TONS of mayo and a little roe.  

    Whoever said sushi was good for must of been on crack.  The only thing I eat at sushi restaurants now is sashimi which is the actual fish. It isn't mixed with anything; that why I like it.  Or I'll eat something like the Yellowtail Roll, Salmon Roll, Smoked Salmon Roll.  Be very skeptical of sushi restraunts. The one I work at is high-end, and you've heard just some of the tales.

I would find out HOW their sushi is prepared.  Sometimes crabmeat is lumped, sometimes shredded with mayo.  The same goes for spicy tuna.  Sometimes it's mixed straight, sometimes with cream cheese, and sometimes with mayo. I'd find out from the server exactly how its made before you swear spicy tuna off completely.  

  4. Each restaurant will have its own recipe for stuff.  You should ask the chef or your server if there is mayonaise in the sushi before ordering.  

    Not all spicy tuna rolls contain mayo - most of the places near me just take chopped maguro and toss it with some tabasco sauce, then lay that on a bed of rice before rolling and slicing.

    If you're friendly, and sitting at the sushi bar, you can ask for custom sushi - like spicy tuna without mayo.  You may pay a bit more per piece, but at least you'll get exactly what you want.

  5. Sometimes mayo is used but I would recommend asking the chef to make sure it does not. Also, make sure he understands English when you ask him/her.
