Sushi: What kind of fish is White Tuna?

I have been told by an owner of a really good sushi restaurant that its not actually tuna... I forgot what type of fish he said it was.

  1. Tuna is dark red meat and turns white when you cook it.


  2. Great question ~ as we're always looking for "Kosher" Sushi and frequently eat the tuna or the salmon, or veggie sushi (and no, it's not gross like the one woman thought). So I was worried - found this entry in wikipedia, it could refer to albacore tuna, or it could refer to Escolar / Snake Mackeral (apparently banned in some places because of laxative effect, yikes!). I've not noticed any of the sushi places here referring to "White Tuna" but I have seen them specifically state "albacore tuna" etc.
