  1. I like making pseudo california rolls; like adding steamed asparagus and sprouts to the normal california roll mix. Also, I've had a sushi roll with seaweed salad in the middle. That's really good.

  2. I've seen a sushi chef do it. you put plastic around your bamboo mat and you begin the roll with layers of thin sliced avocado superimposed then you build your roll from there (with the rice on the outside as opposed to on the inside opposed to the nori once it's finished). you roll it up like that and Voila!

for other types of fish, you'll have to get sushi grade fish and it's not always easy to find (you can find it online) ... other things you can try from the store is fish roe (nice to decorate the outside) and mackerel in jars (though it is pickled)

  3. rainbow roll, check this out: http://www.sushiordeath.com/raw/how-to-m...

how about fresh salmon, eel and shrimp?

  4. A really good one that's great for those not into suchi (in case you have wary friends) is tempura rolls. There is also a spicy kind for an extra kick.

Here is a link for a recipe, it's rather easy to make...

The spicy one should be on that site too.
