  1. Terrific Tabouli Salad

    Ingredients:

    Tabouli Salad

    1/4 c. fresh mint

    1/4 c. fresh basil

    1/4 c. fresh cilantro

    1 1/2 lemons

    4 roma tomatos

    1 bell pepper- red or orange

    1 cucumber

    1/2 large yellow onion

    Yield: 8

    Brief Description: tabouli mix + fresh veggies and herbs

    Directions: Mix 1 1/2 cups Fantastic Foods tabouli mix with 1 1/4 cups water. Let stand in refrigerator for 1 hour.

    Dice all fresh vegetables and mix together. Add diced vegetables to tabouli mix. Finely cute herbs (mint, basil, and cilantro). Add herb mixture to tabouli and vegetables. Cut lemons in half, remove seeds, and squeeze juice and lemon zest into mixture- be sure and fold/ stir along the way to adequately disperse lemon juice. Drizzle with olive oil and stir. Perfect summer treat!

    Tips: Spread hummus on pita or totilla and fill with Terrific Tabouli Salad. Or scoup 2 tablespoons of Terrific Tabouli Salad in crisp Romaine lettuce leaves for a fresh lettuce wrap.

I love tabouli salad!  Easy to prepare as well.  You are not looking in the right place if you cannot find it, as most markets (Wal-Mart included I believe), all sell a mix these days.  Try looking for the brand "Near East", which also makes couscous blends (Roasted Garlic & Olive Oil is wonderful).  Best luck will be in the Asian/Middle Eastern/Mexican sections of the market.  You can also find bulgur wheat in stores that carry "bulk" products, but our Wal-Mart does not.

    To your salad, you will also want to purchase a cucumber and tomato.  If you find a box, you will most likely see a recipe on the back with addition recommendations for a salad.

    If you buy in the bulk section, and therefore have no seasoning packet, post here and I can send you a few recipes, as herbs, etc., do need to be added.

    Not trying to push a boxed product, as that was my only go-to for a long time where I live (I'm a 100% scratch cook myself), and am not sure excactly what you are looking for.  Oh, and yes, it is Greek, as well as all citites surrounding the Mediterrian, including Morroco and Northern Africa (toss-up whose is best!).  I love Northern-Africa, and my parents prefer Greece.

    Anyway, if you need further help with recipes, post and I would be happy to share.

  4. Bulgur will be available in any of the health food stores, such as Whole Foods, Trader Joes, etc.  Ethnic food stores such as Arabic and Indian also carry it.

    TABOULI; TABBOULE SALAD RECIPE

    Lebanon, Palestine

    Prep: 20 - Easy

    Serves 4 - 6

    Delicious Middle Eastern salad or appetizer.

        * 3 cups of finely chopped flat-leaf parsley

        * 1/2 cup of finely chopped fresh mint

        * 4 or 5 finely chopped spring onions (with the green parts)

        * 4 ripe, medium size tomatoes, chopped into small cubes

        * 1 cup of fine burghul (cracked wheat)

        * 1/2 tsp allspice

        * 1/2 cup lemon juice

        * 1/2 jalapeno pepper, de-seeded, chopped fine (optional)

        * 5 TBS good olive oil

        * 3/4 tsp salt; Pepper to taste

    OO Chef's knife, chopping board, mixing bowl

    Rinse burghul several times and then soak in cold water for about 30 minutes.

    Chop the tomatoes (small dice).

    Clean the parsley and remove the large stems (you want mostly leaves). Chop fine.

    Put the burghul in a sieve to drain.

    Trim the spring onions, and chop them into 1/4" lengths.

    Put the drained burghul and tomato in a large mixing or serving bowl. Add salt, pepper, allspice, lemon juice, olive oil, mint, parsley, and optional minced jalapeno.

    Taste for seasoning. If too dry, you can add additional lemon juice and/or olive oil.

    Toss well. Tabouli benefits from resting - you can cover the bowl with plastic wrap and leave in the refrigerator for a few hours or over night, tossing occasionally.

    Serve with cabbage or lettuce leaves - scoop some tabouli into a leaf and enjoy!

    Tabouli Recipe

    1 cup bulgur wheat

    2 cups boiling water

    2 tomatoes, diced finely

    4-5 green onions, sliced

    3 tablespoons fresh mint, chopped

    2 cups fresh parsley, chopped

    1/2 cup fresh lemon juice (or more to your taste)

    1/4 cup olive oil

    salt and pepper

       1. Place uncooked bulgur in a bowl; pour boiling water over it and let it soak for about one hour (stir occasionally). Drain well in a strainer.

       2. Return bulgur to the bowl and add all other ingredients; mix well.

       3. If you like heat, add Cayenne powder to taste.

       4. I also add more lemon; it's up to your taste.

       5. Chill for 2 hours or until the bulgur is soft and not crunchy.
