packs of taco seasoning are all I ever see , does anyone have an authentic recipe for taco seasoning ?

  1. I have my own

    I use a pinch of cayenne,garlic salt, cumin seeds and some salt and pepper


  2. no no , just take a white corn tortilla (small) fill it with grilled steak,  then add lime , cilantro , diced onions , salt to taste and your favorite salsa.

  4. If you want a real authentic taco just buy a flank steak, season with salt and pepper, and grill it.  Then chop up some cilantro, avacado, and throw some salsa in a corn tortilla....YUM.  

    Otherwise you can just season your ground meat with salt, pepper, smoked paprika, onion powder, and garlic powder.

  5. After many years of unsuccessfully trying to find what we "North Americans" call "taco spice" down here in Mexico City, I have been making my own for some years now. Here is a recipe I use:

    I tbsp cayenne (or chili arbol) powder

    1/2 tbsp cumin powder

    1/2 tbsp coriander powder

    1/2 tbsp garlic powder

    1/2 tbsp black pepper

    salt as desired

    11/2 tbsp adobo powder (in Mexico), chili powder (in the US)

    1tbsp paprika

    1 tbsp cornstarch

    1 tbsp crushed Mexican Oregano

    you can vary the ingredients as you prefer, but that will make you a very tasty "American style" taco spice I use it for all kinds of tacos beside just ground beef:

    -ground beef, ground pork, chorizo

    -chopped steak, onion, longaniza,

    -chopped cecina, ground beef, onion

    -chopped pork, chorizo, ground beef

    -chopped arrachera, mushrooms and onion

    (In Mexico away from the frontier, I have NEVER seen "taco seasonings" - ever! If there is such a thing it exists ONLY along a narrow strip of the border or only in the US. In Mexico we usually simply use the many different Mexican sauces (green, guacamole, red, pico de gallo, chipotle, habañero etc.) to spice up tacos, but Mexicans also eat VERY different "tacos" than Americans do. So I would have to say that the "authentic" one must be the one YOU like the best.....)

  6. Mexicans love to use fresh ingredients to season their food. Try ground tomato, onion, garlic and cilantro and pour that over browned ground beef, let is simmer until ready.  You can also make a green salsa from scratch and add shredded chicken. Many taco fillings do not require a seasoning, actually anything can serve as a filling, refried beans, leftovers, any meat or veggie dish, charcoal broiled meat, meat and cheese combinations, etc.

    Exact recipes are also hard to come by where Mexican cooks are concerned, because they usually prepare things according to personal tastes, but you could experiment a little until you find the right combination. Try Diana Kennedy's recipes like chicken mole, which is a very good dish that also doubles as a taco filling, or pork pibil, of which there is a good recipe online if you google it.
