Take garlic, smash it, add some other herbs, add olive oil.?

My husband tells me that italian men used to make this and then eat it like a relish. Anyone know what he is talking about?

  1. You could use that as a dressing for a Mediterranean salad, with cucumber, peppers, spinach and maybe some quinoa or couscous.


  2. It sounds like gremolata:

    2 tbsp. of finely chopped parsley

    2 tsp. grated lemon zest or juice of 1 lemon

    1 tsp. finely choped garlic

    This is a very refreshing kind of relish. It is traditionaly served as a garnish with Osso Bucco. And yes it is famous in Italy. You can also use it for sea food.

  3. Aioli?

    2 ea Egg

           5 ea Garlic cloves, crushed

           1 tb Mustard, prepared

           1 tb Lemon juice

         3/4 c  Olive oil

         1/2 ts Salt

         1/4 ts Pepper

      

       Sauce for seafood.  Separate yolks and wisk yolks with

       mustard and garlic in a bowl.  Add oil drop by

       drop,beating continuously until half of oil is used.

       Add lemon juice a little at a time and remaining oil

       still beating. Season with salt and pepper.

    spread on warm bread - great!

    have it with fried fish as well

  5. With peppers and capacoul and mozzerella or sundried tomato. Kinda like an appitizer but we have it in the house for snacks and with our meal. Oh and olives.
