Tarka Curry anybody?

Yes joking aside about the 'otter'.

There is a take away curry house in Huddersfield that makes a dish called Tarka, the ingredients have soy sauce in it. It also has peppers that taste like they have been pickled.

I have searched everywhere for the recipe and cant find it. Can anybody help?

  1. Tarka is the process of "tempering" a dish with hot oil and spices (mustard seeds, asafetida....).  The dish you had is not a traditional Indian dish, it's not even an Indian Chinese dish (soy sauce & pickled peppers?).  This is obviously an "in house" created concoction created by the chef of the restaurant.  

    Try doing a yahoo/google search for Indian Chinese or Desi Chinese recipes.  Was this a dal dish?  Is it veg or non veg?Any other ingredients well help.

  3. "Tarka" appears to mean "spiced oil", which is a common style of cooking I've noticed with Indian food: oil is heated and the spices sauteed, to transfer the flavours to the oil.  Sorry, can't find any specific "Tarka Curry" recipe either.  "Tarka" is just about as generic as the word "curry"

    The indiacurry.com site is rather interesting...
