  9. Tea, and I choose my tea according to how I feel - the range is vast. Broadly, you have your black teas, which are fermented, then there are Oolongs, which are soft and only semi fermented, and then there are green teas - no fermentation. Teas also have a different character depending upon the region (hence we have Assam, Yunnan, etc), the altitude (high altitude teas tend to be more astringent but I've had some wonderful Himalayan teas that taste of honey!), the season (Darjeelings are sold in both first flush and second flush with very different flavours), and even the individual estate. They are often scented with flowers, such as jasmine, rose, gardenia, and osmanthus - though some of these can be harder to obtain. It is common for lychee tea (not made with lychees but a black chinese tea) to be brewed with dried rose buds.

    It is a wonderful drink.
