There could be a much simpler answer to your problem. Do you know any Spanish speakers in your town? If so, maybe one of them would be interested in working with you one-on-one over the spring and summer to help improve your skills. Outside of an immersion program that is the best way to go.

You might also look into purchasing Rosetta Stone. It's a rather pricey computer program, but very effective.

If you are looking for a program to immerse in Spain or Mexico with a language program to promote you to Sp. 3, it might be possible.  A good 6 week intensive program at a university or one of the better language institutes, over the summer could help you reach your goal.

Search "study abroad programs", and look for one that will give you a full Spanish 2 class.

No chance unless you moved to Mexico or Spain for a few months this summer. Spanish 1 and 2 are dumbed down because they're required for most colleges but jumping for 1 to 3 is impossible
