  1. I call it a quick and dirty quesadilla.  Take one corina (small white corn tortilla), put a slice of American cheese on it, nuke for 19 seconds, fold over and eat.  I've already had 2 today.

    8 oz. softened cream cheese

    8 oz. shredded cheese

    1-2 cans Rotel tomatoes (I like one spicy, 1 mild)

    Melt all together until smooth and serve with tortilla chips

    nothing fancy just a grahm cracker with a chunk of hershey's and a huge marshmallow in the mirowave for 1/2 a minute or so..

    Buy a can of Nalley's original chili, microwave it for about 1min and 45 seconds, and enjoy! You could also put a piece of garlic bred on the side!

  6. I love lots of hot snacks!  Here are some of my favorites:

    1.  Lemon Pepper Wings:  place frozen chicken wings on baking sheet.  Season with salt and bake until cooked thru and crispy.  Toss with kosher salt, garlic and fresh ground lemon pepper.  Serve with a great potato salad.

    2.  Artichoke Dip and Blue Corn Tortilla Chips:  2 cans artichoke hearts, drained and chopped; 1/2 cup mayonaise; 1 jar drained and chopped marinated artichoke hearts; 1 4 oz can diced chili's; 1 T hot sauce; 1 tsp lemon juice; 1/8 tsp garlic powder; 2 cups shredded Italian cheese blend or parmesan cheese.  Mix and place in baking dish.  Bake at 350 degrees until bubbling.  Serve with corn chips.

    3.  Poblamo Chilis with Jack cheese:  Roast chili's over open flame until blistered.  Place in paper bag to "sweat" and remove charred area and "skin".  Cut into 1 inch strips and seed.  Brush with olive oil and sprinkle with garlic powder and kosher salt.  Place jack or pepper jack cheese in each and broil until cheese has melted.

    4.  Nachos:  2 pounds lean ground beef, sauteed and mixed with taco seasoning; 1 large bag yellow or white tortilla chips; 1 4 oz can diced green chili; Pace Chunky Salsa; Shredded Mexican blend cheese; 1 can black olives, sliced and drained; 1 cup sour cream, 1 can vegetarian refried beans.  Mix beans with meat mixture and green chili's and layer with tortilla chips and cheese.  Bake in oven until bubbling and cheese has melted.  Top with sour cream, salsa, and sliced olives.

    5.  Pasta:  cook whole grain rotelle until done.  Drain and toss with olive oil, chopped artichoke hearts, sliced olives, and shredded cheese.  Sprinkle with kosher salt, pepper, and Italian herbs.

    but a few triscits on a plate then put sprinkled cheese on top.pop it in microwave until cheese is melted

    Or a kind of hot snack. you need: a box of triscits, strawberries,whipped cream, brown sugar, butter, and evaporated milk.. first you get a skillet out and melt butter and then put brown sugar pour about a half a cup of evaporated milk in let it caramelize. Sit a few triscits on a plate, then place a half of a strawberry on top of the triscit, then pour carmel over top, and then top with whipped cream!!!!!!!!!!!!!!!!!!

  8. 1 bag tostidos chips

    1 bag shredded cheddar

    1 package immitation crab meat

    1 tsp Paprika for topping

    Spread chips over baking sheet

    Shred crab meat over chips

    Sprinke cheese over crab

    Sprinkle paprika over top

    Broil for 3-5 min. in oven until it melts.  Yummy seafood nachos!

  9. Well It's not really that hot but I like melted cheese on triscuts. Like the little triangular cracker things. It's actually better than it sounds.

    You just take 6 triscuts and put them into a little circle so that they fit perfectly and then you take a slice of cheese (any kind) and put it on top. Then you put it in the microwave for about 20 seconds and stop it and I f you like the cheese more crispy then put it in for longer. But only 10 or 15 seconds at a time.

  10. Seared eggplant and mozzarella sandwiches.

    1 large eggplant

    1/4 pound fresh mozzarella.

    Slice eggplant horizontally into circles and broil at 350 until crispy. Cut your mozzarella to fit the eggplant slices and cook in a saute pan as if it were a grilled cheese! minus the butter.....

    chocolate brie panini!!!!

    all you need is,

    about a handful of chocolate chips (depending on your chocolate cravings,

    2 slices of flatbread or sourdough bread

    olive oil

    a few slices of brie cheese, rinds off

    and about 3 leaves of fresh basil!

    all you do is spread the olive oil on the bread and press them on the frying pan until both sides are golden, then take them off, put brie, then chocolate, then basil on, top with other bread, and put back on the frying pan. take a smaller lid of another pan and press the sandwich down so the cheese melts and oozes out the sides. very rich and very very good!

  12. Avocado and lemon pepper grilled.

    I have a roll that I cut in half, spread half the avocado on one side and the other half on the other side. Sprinkle with lemon pepper or cracked pepper and put under the griller (I think this is called a broiler in USA?) until toasted on top.

    Crab and Lobster Stuffed Mushrooms

    INGREDIENTS

    3/4 cup melted butter, divided

    1 pound fresh mushrooms, stems removed

    1 cup crushed seasoned croutons

    1 cup shredded mozzarella cheese

    1 (6 ounce) can crabmeat, drained

    1 pound lobster tail, cleaned and chopped

    3 tablespoons minced garlic

    1/4 cup shredded mozzarella cheese



    DIRECTIONS

    Preheat the oven to 375 degrees F (190 degrees C). Brush a large baking sheet with about 1/4 cup of melted butter. Arrange mushroom caps in a single layer over the baking sheet.

    In a medium bowl, mix together the crushed croutons, remaining 1/2 cup butter, shredded cheese, crabmeat, lobster and garlic. Spoon into mushroom caps where the stems used to be.

    Bake for 10 to 12 minutes in the preheated oven, or until lightly browned on the top. Sprinkle with additional cheese if desired, and serve hot!

    Blue Cheese and Pear Tartlets

    INGREDIENTS

    4 ounces blue cheese, crumbled

    1 ripe pear - peeled, cored, and chopped

    2 tablespoons light cream

    ground black pepper to taste

    1 (2.1 ounce) package mini phyllo tart shells



    DIRECTIONS

    Prebake phyllo shells according to package directions. Set aside to cool.

    Mix together blue cheese, pear, and cream. Season to taste with pepper. Spoon mixture into cooled shells.

    Bake at 350 degrees F (175 degrees C) for 15 minutes. Serve warm.

    Crab Rangoon

    INGREDIENTS

    2 (8 ounce) cans refrigerated crescent rolls

    1 pound fresh lump crabmeat, drained

    1 (8 ounce) package cream cheese, softened

    1/3 cup cocktail sauce



    DIRECTIONS

    Preheat oven to 375 degrees F (190 degrees C). Grease two baking sheets.

    Unroll the crescent roll dough and separate into triangles. Roll or press the triangles out on a clean surface, making them larger than their original size by half. Lay the triangles out on the prepared baking sheets; set aside.

    Finely chop the crabmeat and place in a large mixing bowl. Add the cream cheese and cocktail sauce and mix until all of the ingredients are well-combined.

    Place a tablespoon of the crab mixture on the large side of each crescent triangle. Pull the two bottom edges of the triangle together and pinch the seam closed over the crab mixture. Pull forward the remaining tip of the triangle to cover the remaining crab mixture and pinch the seams to close.

    Bake in the preheated oven until the crab puffs are golden brown, 10 to 15 minutes. Cool 5 to 10 minutes before serving.

    Pumpkin Fritters

    INGREDIENTS

    1 cup pumpkin puree

    1 egg, lightly beaten

    1 cup all-purpose flour

    1 teaspoon baking powder

    11/2 teaspoon curry powder

    1 teaspoon salt

    4 cups vegetable oil for frying



    DIRECTIONS

    In a medium bowl, combine pumpkin, egg, flour, baking powder, curry powder, and salt. Mix until smooth.

    Heat oil in a deep saucepan to 325 degrees F (165 degrees C). Drop batter by spoonfuls into hot oil. Fry until golden brown, about 2 minutes. Remove with a slotted spoon, and serve immediately.

    Chicken Satay with Homemade Peanut Sauce

    INGREDIENTS

    1 pound skinless, boneless chicken thighs, cut into 1/2 inch strips

    1 clove garlic, minced

    2 teaspoons minced fresh ginger root

    1 tablespoon fish sauce

      

    2 teaspoons peanut oil

    4 shallots, minced

    2 teaspoons minced garlic

    2 teaspoons minced fresh ginger root

    2 small red chile peppers, seeded and minced

    1/2 cup crunchy peanut butter

    1 3/4 cups coconut milk

    2 teaspoons soy sauce

    2 teaspoons brown sugar

    1 1/2 tablespoons fish sauce

    1 1/2 tablespoons lime juice

      

    12 wooden skewers, soaked in water for 1 hour



    DIRECTIONS

    Toss chicken, garlic, ginger, and 1 tablespoon fish sauce in a bowl until the chicken is coated in the marinade. Cover, and marinate for 1 hour.

    While the chicken is marinating, heat the peanut oil in a skillet over medium heat. Stir in shallots, garlic, ginger, and chile peppers. Cook and stir until the shallot begins to turn golden brown, about 7 minutes. Reduce heat to low, and stir in peanut butter, coconut milk, soy sauce, brown sugar, 1 1/2 tablespoons fish sauce, and lime juice until blended. Simmer very gently for 10 minutes, then remove from heat and keep warm.

    Preheat an outdoor grill for medium-high heat and lightly oil grate. Thread chicken onto skewers.

    Grill chicken skewers on preheated grill until no longer pink in the center, about 3 minutes per side. Serve with warm peanut sauce.


  14. I like kielbasa cut about the thickness of a quarter. Cooked in a frying pan with a 12 ounce can of ginger ale. Cook until the ginger ale becomes carmalized about 20 minutes. Stir the kielbasa occasionally and make sure all the sides are brown. Delicious.

  15. Eggs:- Fried

    Break your egg onto a saucer.

    Heat your frypan to medium and add a k**b of butter. You want to use enough butter to coat the frypan.

    When the butter stops sizzling slide in the egg and let cook to the degree you wish.

    I prefer sunny side up.

    Turn if you want them “over easy”  or “over hard”.

    Note, in some countries the yolks need to be cooked.

    Serve on buttered toast.
